Easy No-Bake Cookie Dough Truffles
These cookie dough truffles taste just like sneaking a spoonful of raw dough, only they’re completely safe to eat and require zero baking.

They come together with about 15 minutes of hands-on work. A quick chill, a dunk in melted chocolate, and you have a tray of bite-sized treats that disappear fast.
What Makes These Truffles So Good
The filling is sweet and buttery, with that familiar brown sugar chew. Mini chocolate chips scattered through the dough give tiny pops of chocolate in each bite.
The dark chocolate coating hardens into a thin shell that cracks just enough when you bite in. The firm shell and soft center make a texture I keep coming back to.
They stay good in the fridge, so I can make a batch a few days ahead and still have something to offer when people show up.
Ingredients

- 1 cup all-purpose flour, heat-treated: see step 1 for the quick oven method
- 1/2 cup unsalted butter, softened: let it sit at room temperature for 30 minutes
- 3/4 cup packed light brown sugar: dark brown sugar works if you want a deeper molasses note
- 1 tsp vanilla extract
- 1/4 tsp salt: fine sea salt or table salt
- 1/2 cup mini semisweet chocolate chips: regular chips are fine, just chop them a bit
- 8 oz dark chocolate, chopped: or dark chocolate melting wafers
- 1 tsp coconut oil or vegetable shortening: optional, for a thinner chocolate coating
Variations / Substitutions
- Butter substitute: use a solid vegan butter stick, softened the same way
- Gluten-free option: a 1-to-1 gluten-free flour blend works; still heat-treat it
- Chocolate coating: swap dark chocolate for milk or white chocolate
- Add crunch: stir in 2 tbsp finely chopped toasted pecans or almonds with the chips
- Sprinkles: press a few sprinkles onto each truffle right after dipping

How to Make Cookie Dough Truffles
Step 1: Toast the Flour

Preheat your oven to 350°F (175°C). Spread the 1 cup of all-purpose flour in an even layer on a rimmed baking sheet. Bake for 5 to 7 minutes, stirring once halfway through.
The flour will look slightly dry and no longer give off a raw, starchy smell. Let it cool completely on the sheet before you mix it into the dough.
Step 2: Mix the Dough

In a medium bowl, beat the 1/2 cup softened butter and 3/4 cup brown sugar with a hand mixer on medium speed for about 2 minutes, until the mixture looks lighter and fluffy. Add the 1 tsp vanilla and 1/4 tsp salt, then beat until combined.
Add the cooled, heat-treated flour and mix on low just until no dry streaks remain. Fold in the 1/2 cup mini chocolate chips with a spatula. The dough will be thick and a little crumbly but should hold together when you press it. If it feels too dry, you can work in 1 tsp of milk at a time until it comes together.
Step 3: Roll the Truffles

Pop the bowl of dough in the fridge for about 20 minutes so it firms up. Once chilled, scoop level tablespoons of dough and roll them between your palms into smooth 1-inch balls. Place them on a parchment-lined plate or baking sheet.
The balls should feel solid and cool to the touch. Return them to the fridge for at least 20 more minutes before dipping. Keeping them cold prevents the dough from softening too much when it hits the warm chocolate.
Step 4: Dip in Chocolate

Chop 8 oz dark chocolate and place it in a microwave-safe bowl with the 1 tsp coconut oil. Microwave in 30-second bursts, stirring after each, until the chocolate is fully melted and smooth. This usually takes about 1 minute total.
One at a time, drop a cold truffle into the melted chocolate. Use a fork to lift it out, letting the excess chocolate drip back into the bowl. Set the coated truffle back on the parchment-lined sheet. Once all are dipped, place the tray in the fridge for about 10 minutes so the chocolate sets to a glossy shell. Serve them straight from the fridge.
A Few Notes Before You Start
- Make sure your butter is truly softened, not melted. If it’s too warm, the dough can turn greasy once chilled.
- A small cookie scoop makes it easy to get evenly sized truffles that set at the same rate.
- For the smoothest chocolate coating, warm the bowl of melted chocolate briefly if it starts to thicken while you dip.
- You can decorate the tops with a drizzle of contrasting chocolate or a pinch of flaky sea salt while the coating is still wet.
Scale the batch up or down:
| Truffles | Butter | Brown Sugar | Flour | Chocolate Chips | Coating Chocolate |
|---|---|---|---|---|---|
| 12 | 1/4 cup | 6 tbsp | 1/2 cup | 1/4 cup | 4 oz |
| 24 | 1/2 cup | 12 tbsp | 1 cup | 1/2 cup | 8 oz |
| 36 | 3/4 cup | 1 cup + 2 tbsp | 1 1/2 cups | 3/4 cup | 12 oz |
Storing Leftover Truffles
- Refrigerate: Keep the truffles in an airtight container in the fridge for up to 1 week. The chocolate stays firm and the centers stay fudgy.
- Freeze: Arrange the coated truffles on a tray and freeze until solid, then transfer to a freezer bag. They’ll keep for up to 1 month. Thaw in the fridge before serving.
Frequently Asked Questions
Can I use whole wheat flour instead of all-purpose?
You can, but the texture will be noticeably denser and the flavor earthier. All-purpose gives the truest cookie dough feel.
Is heat-treating the flour really necessary?
Yes, raw flour can carry harmful bacteria. A quick bake at 350°F for 5 to 7 minutes removes that risk without changing the taste.
Why are my truffles cracking when I dip them?
The dough is probably too cold, causing the chocolate to set too fast and contract. Let the balls sit at room temperature for just a few minutes before dipping.
Can I use milk chocolate for the coating?
Yes, milk chocolate works. The truffles will be noticeably sweeter overall, so you might want a small pinch of salt on top for balance.
