Lemony Garlic-Herb Whole Chicken Marinade
A bright, herby marinade that turns a simple whole chicken into a juicy, golden roast. Five minutes of mixing, a few hours of waiting, and you get a bird that smells like a slow Sunday but fits any weeknight.

The lemon and yogurt work together to tenderize, while garlic and fresh herbs build deep flavor. This is the kind of meal that makes the house smell incredible before anyone even sits down.
Why This Marinade Works
It hits the right notes: acid for tenderness, oil for moisture, and aromatics that perfume the whole bird. The yogurt adds a gentle tang and helps the skin bronze beautifully in the oven.
The ingredient list is short. If you have a lemon, a bulb of garlic, and a handful of herbs, you are most of the way there.
Ingredients

- 1 whole chicken (4 to 5 lb / 1.8 to 2.3 kg): giblets removed
- 1/4 cup olive oil: the base that carries all the flavor
- 3 tbsp fresh lemon juice (about 1 large lemon): acid that tenderizes and brightens
- 2 tbsp plain yogurt: full-fat or Greek, for tang and better browning
- 4 garlic cloves, minced
- 1 tbsp finely chopped fresh rosemary
- 1 tbsp fresh thyme leaves
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika: optional, but gives the skin a warm color
Variations / Substitutions
- No fresh herbs: use 1 tsp dried rosemary and 1 tsp dried thyme instead. The flavor will be slightly more mellow.
- Yogurt swap: buttermilk works, or leave it out. The skin may not darken as much without it.
- Lemon alternative: white vinegar adds a similar brightness.
- Spice it up: stir in a pinch of red pepper flakes or a chopped fresh chili.
- Dairy-free: a thick coconut yogurt does the job nicely.
Baked Chicken Kiev is one of our favorite ways to use this marinade.
How To Make Lemony Garlic-Herb Whole Chicken Marinade
Step 1: Mix the Marinade

In a medium bowl, whisk together the 1/4 cup olive oil, 3 tbsp lemon juice, 2 tbsp yogurt, minced garlic, chopped rosemary, thyme leaves, 1 tsp salt, 1/2 tsp pepper, and 1 tsp smoked paprika if you are using it.
The mixture will be thick and flecked with herbs, and the garlic hits right away. It should be well combined so every spoonful clings to the chicken.
Step 2: Coat the Chicken

Place the chicken in a large dish or a zip-top bag. Pour the marinade all over it, then use your hands to massage it into every nook. Lift the skin over the breast and thighs and rub some directly onto the meat. Cover and refrigerate for at least 2 hours, or up to 12 hours for deeper flavor.
After massaging, the skin will look glossy and speckled, with bits of herb stuck to it. The longer it sits, the more the lemon and garlic work their way in.
Step 3: Roast the Chicken

Preheat your oven to 400°F (200°C). Take the chicken out of the fridge and let it sit at room temperature while the oven heats, about 30 minutes. Set the bird on a rack inside a roasting pan, breast side up. Tuck the wing tips under and tie the legs with twine if you like. Roast for 60 to 75 minutes, until the thickest part of the thigh reads 170°F to 175°F (77°C to 79°C) on an instant-read thermometer.
The skin will turn a deep amber gold and might crackle when you open the door. If the breast browns too fast, tent it loosely with foil after about 45 minutes.
Step 4: Rest and Carve the Chicken

Move the chicken to a cutting board and let it rest for 10 to 15 minutes before carving. This keeps the juices from spilling out all over your board.
Use a sharp knife to carve into pieces, and you will see steam rise. The meat underneath the skin will be tender and faintly lemony.
Tips for the Best Marinated Roast Chicken
- Dry the chicken well with paper towels before marinating so the marinade sticks and the skin crisps.
- Do not marinate for more than 24 hours. The lemon can start to make the meat mushy.
- Letting the bird sit at room temp before roasting helps it cook evenly. A cold chicken hits a hot oven and can seize up.
- Save the pan drippings to spoon over the carved meat or to build a quick pan sauce.
Bake times by weight:
| Weight | Roast Time (at 400°F) |
|---|---|
| 3 to 3.5 lb | 50 to 60 mins |
| 3.5 to 4.5 lb | 60 to 70 mins |
| 4.5 to 5 lb | 70 to 80 mins |
Storing Leftovers
- Refrigerate: carved chicken in an airtight container for up to 4 days.
- Reheating: gently at 300°F, covered with foil, keeps it from drying out.
- Serve cold: is a great option too. The meat stays moist in sandwiches or on salads.
What To Serve With Lemony Garlic-Herb Whole Chicken Marinade
A simple arugula salad with shaved Parmesan cuts through the richness. Crusty bread is perfect for soaking up the herby pan juices. If you want something heartier, roasted carrots and potatoes cooked in the same pan pick up all those drippings.
Frequently Asked Questions
Can I freeze the chicken in the marinade?
Yes. Place the chicken and marinade in a freezer-safe bag, remove air, and freeze for up to 2 months. Thaw overnight in the refrigerator before roasting.
Can I use this marinade on other poultry, like turkey or Cornish hens?
Absolutely. For a whole turkey, double the recipe and marinate 12 to 24 hours. For Cornish hens, the same amount works; just roast for less time, about 30 to 40 minutes.
Will this marinade work with chicken pieces instead of a whole bird?
Yes, it works beautifully with drumsticks, thighs, or bone-in breasts. Marinate for 2 to 4 hours and adjust the roast time down, checking for doneness early.
