15-Minute Creamy Salmon Cucumber Salad
Salmon cucumber salad is my answer when I want something cool, creamy, and filling without heating up the kitchen. Flaked salmon, crisp cucumbers, and a quick lemon-dill yogurt dressing come together in about 15 minutes.

It’s a lunch that feels more substantial than a pile of greens but still leaves you light on your feet. I reach for this when the weather is warm or I simply cannot face the stove.
What Makes This Salad So Refreshing
The cucumbers stay cold and crunchy, the salmon gives it a gentle richness, and the yogurt dressing adds a tangy freshness that keeps you coming back for more. Creamy without being heavy.
I like that it uses things I almost always have on hand: a couple cans of salmon in the pantry, a cucumber in the crisper, and some yogurt. It feels like a recipe that saves you more than one day a week.
Ingredients

- 2 (6 oz) cans salmon, drained and flaked: wild-caught gives the best flavor, and leftover cooked salmon works beautifully here too
- 1 large English cucumber, diced: these stay crisp and have thin skin, so no peeling needed
- 1/4 cup finely chopped red onion: soak in ice water for 5 minutes if you want to mellow the bite
- 1/4 cup chopped fresh dill: dried just doesn’t bring the same brightness
- 1/2 cup plain Greek yogurt: full-fat makes the creamiest dressing
- 2 tbsp lemon juice: fresh squeezed really does taste better here
- 1 tbsp capers, drained (optional): they add a salty, briny pop
- Salt and pepper to taste
Variations and Substitutions
- No salmon?: Canned tuna or shredded cooked chicken can step right in.
- Dairy-free: swap the yogurt for a plain unsweetened coconut yogurt or whisk together a lemony vinaigrette instead.
- Herb swap: fresh parsley or chives work nicely in place of dill.

How to Make Salmon Cucumber Salad
Step 1: Whisk the Dressing

In a large bowl, whisk together the 1/2 cup Greek yogurt, 2 tbsp lemon juice, and a pinch each of salt and pepper until smooth. This takes about 30 seconds and gives you a creamy, tangy base that will coat everything evenly.
Step 2: Fold in the Salmon and Cucumbers

Add the 2 drained cans of flaked salmon, the diced cucumber, chopped red onion, dill, and capers if using. Gently fold everything together for about 30 seconds until the cucumber and salmon are evenly coated. Taste and adjust the salt and pepper. The salt helps pull out the cucumber’s natural sweetness.
Step 3: Serve It Up

Spoon the salad straight into bowls or onto a bed of crisp lettuce leaves. A little extra dill on top and a crack of black pepper make it look as fresh as it tastes. Eat it right away while the cucumbers are at their crunchiest.
A Few Notes Before You Start
- Cucumber choice matters. English or Persian cucumbers are best because they have thin skins and few seeds, so they stay crisp and don’t water out the dressing. If you only have a regular cucumber, peel it and scoop out the seeds first.
- Don’t skip the fresh dill. It’s what makes the salad taste bright and herbal. Dried dill works in a pinch, but the result is earthier and less punchy.
- For a little heat, stir in a pinch of red pepper flakes or a dash of hot sauce. It wakes everything up without overpowering the salmon.
- Full-fat Greek yogurt gives you the creamiest dressing. Low-fat works, but the salad will feel thinner and a bit tangier.
Keeping It Fresh
This salad is best the day you mix it, when the cucumbers are crisp. Leftovers keep in an airtight container in the fridge for up to 1 day. The cucumbers soften overnight, but the salad is still safe and tasty. Serve it cold, straight from the fridge.
Frequently Asked Questions
Can I use fresh salmon instead of canned?
Yes. Poach or grill about 12 oz salmon, let it cool, then flake it into the salad. It will taste a little milder and more delicate.
I don’t have Greek yogurt. Can I use sour cream or mayo?
Sour cream works one-for-one and gives a similar tang. Mayo will make it richer but heavier. Start with 1/3 cup and thin it with a splash of lemon juice if needed.
Can I make this salad ahead for a party?
You can mix the dressing and prep the add-ins (salmon, onion, dill) a few hours ahead. Just leave the cucumber out until 30 minutes before serving, then fold everything together. The cucumber stays crisp that way.
