3-Ingredient Protein Ice Cream
Protein ice cream is thick, cold, and tastes like soft serve with far more staying power thanks to about 26 grams of protein per bowl. It turns a handful of frozen bananas and a scoop of protein powder into dessert in under 5 minutes.

No ice cream maker, no churning, and only three ingredients. This is the version I come back to when I want something sweet that actually fills me up.
What Makes This Protein Ice Cream So Good
Frozen bananas do all the heavy lifting. They blend into a creamy, scoopable texture that needs zero added sugar or dairy to taste rich. The fruit’s natural starch gives it body, while the protein powder firms it up and turns it into a proper dessert, not a smoothie.
Because the flavor comes from the powder you choose, you can switch it up endlessly. Vanilla is my go-to, but chocolate or strawberry work just as well.
Ingredients

- 2 ripe bananas, sliced and frozen: the riper the banana, the sweeter the final ice cream will be.
- 1 scoop vanilla or chocolate protein powder (about 30g): pick a brand you already like, it carries the whole flavor.
- 2 tbsp milk of choice: add only as much as needed to get things moving.
Variations / Substitutions
- Protein flavor: vanilla, chocolate, strawberry, or even a salted caramel blend all work.
- Add-ins: blend in 1 tbsp peanut butter, 1 tbsp cocoa powder, or a small handful of frozen berries for a different spin.
- Dairy-free: use almond or oat milk and a plant-based protein powder.

How To Make Protein Ice Cream
Step 1: Blend the Frozen Bananas

Place the 2 frozen banana slices into a high-speed blender or food processor. Pulse a few times, then blend on high for about 1 minute, scraping down the sides as needed. Stop when the bananas break into small crumbly bits and start to look creamy.
They should look like a soft, grainy paste. If the blades spin without catching anything, add 1 teaspoon of milk to get things going and hold back the rest.
Step 2: Add the Protein and Milk

Scrape down the blender, then add the 1 scoop protein powder and 2 tbsp milk. Blend again for 30 seconds to 1 minute, until the mixture becomes thick and smooth, like soft serve ice cream.
If it is still too stiff to move, add milk 1 teaspoon at a time. Too much liquid turns this into a drink, so go slow and check after each addition.
Step 3: Scoop and Serve

Once the texture holds a soft peak, spoon the ice cream into a bowl right away. It softens quickly, so eat it fresh while it is still cold and silky.
Top with a sprinkle of granola, a few dark chocolate chips, or just enjoy it plain.
Tips for Creamy Protein Ice Cream
- Use bananas that are spotted or fully brown before freezing them. Underripe fruit makes the ice cream bland and starchy.
- Slice the bananas before you freeze them so your blender doesn’t have to break down whole chunks.
- Freeze the banana slices on a flat tray for at least 4 hours so they stay separate and blend evenly.
- If the mixture warms up too much while blending, pop the blender jar into the freezer for 5 minutes, then finish blending.
Scale it up for meal prep:
| Servings | Bananas | Protein Powder | Milk |
|---|---|---|---|
| 1 | 2 | 1 scoop (30g) | 2 tbsp |
| 2 | 4 | 2 scoops (60g) | 3-4 tbsp |
| 4 | 8 | 4 scoops (120g) | 5-6 tbsp |
Storing Leftover Protein Ice Cream
- Refrigerate: this does not keep in the fridge. It will melt into a smoothie.
- Freeze: scoop leftovers into an airtight container and freeze for up to 1 week. The texture will turn solid and icy.
- Serve again: let the frozen block sit at room temperature for 10 minutes, then break it up and re-blend briefly to bring back the soft serve consistency. A splash of milk helps if it is too dry.
Frequently Asked Questions
Can I make this without protein powder?
Yes, but the texture will be softer and it will taste like banana soft serve. Reduce the milk to 1 tablespoon and add a teaspoon of vanilla extract for flavor.
My ice cream turned out runny. What went wrong?
Too much liquid sneaked in. Next time, add milk only a teaspoon at a time and stop as soon as the mixture moves freely in the blender.
Can I use a different frozen fruit instead of bananas?
Bananas give the creamy base, so swapping them out entirely will change the end result. A good half-and-half approach is 1 banana plus 1 cup frozen mango for a tropical version, but it will be less thick.
Is this recipe vegan?
It can be. Use a plant-based protein powder and a dairy-free milk, and the whole bowl is vegan.
