How to Make No-Bake Pumpkin Pie
Step 1: Bloom the Gelatin

Sprinkle 1 envelope unflavored gelatin over 1/4 cup cold water in a small bowl. Let it sit for about 5 minutes, until the mixture looks spongy and has absorbed the water.
Microwave the bowl for 15 to 20 seconds until the gelatin melts into a clear liquid, then stir it. If it starts to set while you work on the other steps, just warm it again briefly.
Step 2: Beat the Pumpkin Base

In a large bowl, beat 8 oz softened cream cheese with 3/4 cup sugar until the mixture is smooth and no white streaks remain. Scrape down the sides, then add the full can of pumpkin puree, 1 tsp vanilla, and 2 tsp pumpkin pie spice. Beat again until evenly combined.
With the mixer on low, gradually pour in the melted gelatin. Continue beating just until the mixture looks uniform; it will be thick and creamy.
Step 3: Whip the Cream

In a separate chilled bowl, whip 1 cup cold heavy cream to soft peaks. You’ll know it’s ready when the cream holds a shape that flops over when you lift the beater.
Don’t over-whip, or the cream will turn grainy. You want it billowy and light, not stiff like mousse.
Step 4: Fold and Fill the Pie

Gently fold the whipped cream into the pumpkin mixture with a rubber spatula. Cut through the center and lift from the bottom until the color is even and no white streaks show. The filling should look airy and mousse-like.
Pour the filling into the prepared graham cracker crust and smooth the top with the spatula. Cover the pie loosely and chill it for at least 4 hours, until the center is firm to the touch.
Step 5: Slice and Serve

Remove the chilled pie from the fridge. Run a knife dipped in hot water around the inside edge to loosen the crust, then use the same knife to slice cleanly, wiping between cuts.

Frequently Asked Questions
Can I use pumpkin pie filling instead of puree?
No. Pumpkin pie filling is pre-sweetened and spiced, and it often has a thinner consistency. That would throw off the sweetness and setting of this recipe. Stick with pure pumpkin puree.
Why didn’t my pie set?
Two common reasons: the gelatin didn’t fully dissolve, or the pie didn’t chill long enough. Make sure you heat the bloomed gelatin until it’s completely liquid and give the pie at least 4 hours in the fridge, overnight is even better.
Can I use a different crust?
