5-Minute Lemon Chicken Marinade
This lemon chicken marinade turns ordinary chicken breasts into something I actually look forward to eating on a Tuesday. The whole thing comes together in five minutes with a handful of ingredients you probably already have.

How to Make Lemon Chicken Marinade
Step 1: Whisk the Marinade

In a small bowl, whisk together the 1/4 cup olive oil, 1/4 cup lemon juice, the minced garlic, 1 tsp Dijon mustard, 1 tsp oregano, 1/2 tsp salt, and 1/4 tsp pepper. Go at it for about 30 seconds so the oil and lemon form a loose emulsion.
The mixture will look pale yellow and smell mostly of lemon and garlic. If the oil separates quickly, whisk again right before you pour it over the chicken.
Step 2: Marinate the Chicken

Place the 4 chicken breasts in a large zip-top bag or a shallow dish. Pour the marinade over them, seal the bag while pressing out the air, then massage the outside of the bag so every piece gets coated evenly.
If using a dish, turn the chicken a couple of times. Set it in the refrigerator for at least 30 minutes, or up to 2 hours. Longer than 2 hours and the acid can start to make the chicken mealy, so I set a timer.
Step 3: Grill the Chicken

Preheat a grill or grill pan to medium-high heat, about 400°F (200°C). Remove the chicken from the marinade and let the excess drip off. No need to rinse. Place the breasts on the hot grates and cook for 6 to 7 minutes on the first side, until you see deep grill marks and the edges look opaque.
Flip and cook another 5 to 7 minutes. The chicken is done when a probe inserted in the thickest part reads 165°F (74°C). If you do not have a thermometer, cut into one piece: the juices should run clear and the center should be white, not pink.
Step 4: Slice and Serve the Chicken

Move the chicken to a cutting board and let it rest for 5 minutes. This keeps the juices from running out the moment you cut. Slice against the grain into strips.
Serve the slices warm, with a squeeze of fresh lemon over the top and a little flaky salt. The outside will be lightly charred and the inside will stay tender.
