Lemon Chicken Marinade Recipe

Ingredients
  

  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 garlic cloves, minced
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 boneless, skinless chicken breasts (about 6 oz / 170g each)

Method
 

  1. Whisk the olive oil, lemon juice, garlic, Dijon, oregano, salt, and pepper in a small bowl.
  2. Place the chicken in a zip-top bag. Pour in the marinade, seal, and massage until coated. Refrigerate for 30 minutes to 2 hours.
  3. Preheat a grill to medium-high (400°F / 200°C). Remove chicken from marinade and grill 6 to 7 minutes per side, until internal temp reaches 165°F (74°C).
  4. Rest the chicken on a cutting board for 5 minutes, then slice against the grain and serve.

Notes

For the juiciest results, do not marinate longer than 2 hours. If you want to prep ahead, freeze the chicken right in the marinade and thaw overnight before cooking.
