Step 1: Heat your oven to 400F (200C). In a small saucepan over medium heat, whisk together 80 ml soy sauce, 120 ml apple juice, 2 tbsp rice vinegar, 60 g brown sugar, the garlic and ginger, and 1 tbsp cornstarch. Cook for 3 minutes while you whisk, until the glaze thickens enough to coat a spoon.
Step 2: In a 9×13 dish, stir 250 g jasmine rice with the broccoli and carrots. Pour 360 ml water and half the teriyaki glaze over the rice, then stir once. You want the rice mostly submerged so it cooks evenly.
Step 3: Cover the dish tightly with foil and bake for 25 minutes. Pull it out and fold in 450 g chicken and the remaining glaze. If the rice looks dry, add 2 tbsp water and you will be fine.
Step 4: Bake for 10 minutes, until the rice is tender and the chicken is hot. Let it sit for 5 minutes so the glaze settles into the grains and you can fluff it without mashing.
Step 5: Fluff with a fork and serve hot, spooning extra sauce from the pan over each portion. You get sweet-salty rice, soft broccoli, and no separate pot to wash.
