- Frozen peas and carrots: 200 g (1 1/2 cups)
- Sharp cheddar cheese, shredded: 120 g (1 1/4 cups)

- Panko breadcrumbs: 40 g (1/2 cup)

Instructions
Step 1: In a mixing bowl, stir together the 480 g (2 cups) cooked rice, 450 g (1 lb) diced chicken, 200 g (1 1/2 cups) frozen peas and carrots, 120 g (1 1/4 cups) cheddar, 60 g (1/4 cup) mayonnaise, and 1 tsp Dijon mustard. You’ll see the mixture hold together when you press it with the spoon.
Step 2: Season the mixture with salt and black pepper, then divide it among four lightly greased 240 ml (1 cup) ramekins. Pack each one just enough to hold its shape, but you do not compact it hard or the rice turns dense.
Step 3: Stir the can of condensed cream of chicken soup in a small bowl until smooth, then spoon it evenly over the four ramekins. You want a thin layer that will bubble down into the rice as the air fryer heats it.
Step 4: Toss 40 g (1/2 cup) panko with the 20 g (1 1/2 tbsp) melted butter in a small bowl, then sprinkle the buttery crumbs over each ramekin. Slide the ramekins into your air fryer basket and set it to 180C (350F) for 12 minutes. You can check at 10 minutes and give the basket a gentle shake if the tops are browning unevenly.
Step 5: Remove the ramekins when the panko is deep golden and the sauce bubbles around the edges. Rest them for 5 minutes before you hand each one over on a small plate with a spoon. This is the version to make when you want no leftovers and no big dish to wash.
The one step that matters most across all these bakes is the rest after the oven. Give the casserole 5 to 10 minutes on the counter so the rice can finish absorbing the sauce and the layers set enough to slice cleanly.
