Quick Zucchini Pasta Salad with Lemon and Feta
This zucchini pasta salad is my go-to when I want something light and fast but still feels like a real side dish. Raw spiralized zucchini gives it a fresh crunch, and the lemon dressing soaks into the pasta while it chills.

Why This Salad Stays in the Rotation
It comes together in about 25 minutes and gets better after a rest in the fridge. The zucchini stays crisp even overnight, so leftovers hold up.
I use a mix of short pasta and thick zucchini noodles. The pasta provides the substance, and the zucchini ribbons carry the dressing into every bite. Feta adds just enough saltiness without overpowering the lemon.
Ingredients

- 8 oz short pasta: rotini, fusilli, or penne hold the dressing well
- 2 medium zucchini, spiralized: about 4 cups of thick noodles, no need to salt or drain
- 1 cup halved cherry tomatoes: adds a little sweetness and color
- ⅓ cup crumbled feta cheese: the brined block kind gives better texture than pre-crumbled
- ¼ cup fresh basil leaves, torn: toss in just before serving to keep them bright
- 3 tbsp extra-virgin olive oil: enough to coat everything without pooling
- 2 tbsp fresh lemon juice: from about half a large lemon
- 1 tsp lemon zest: boosts the lemon flavor without more acid
- 1 small garlic clove, minced: mellows in the dressing, do not skip it
- ½ tsp kosher salt: plus more for the pasta water
- ¼ tsp black pepper: freshly ground if you have it
Variations / Substitutions
- Make it dairy-free: swap the feta for chopped kalamata olives or toasted pine nuts. You lose the creamy saltiness but gain an earthy richness.
- Add protein: fold in 1 cup of shredded rotisserie chicken or a drained can of chickpeas to turn the salad into a light main.
- Swap the herb: use fresh mint or flat-leaf parsley if basil is not around. Mint is especially good on hot days.
- Try a different cheese: shaved parmesan or goat cheese crumbles work well. Goat cheese makes the salad a little creamier.
- No spiralizer: slice the zucchini into thin half-moons and toss them in raw. The texture will be less noodle-like but still crunchy.

How to Make Zucchini Pasta Salad
Step 1: Cook the Pasta

Bring a large pot of salted water to a boil and cook the 8 oz pasta according to the package directions until al dente, usually about 8 to 10 minutes. Salt the water until it tastes like the sea so the pasta picks up flavor from the inside.
Drain the pasta and rinse it under cold water to stop the cooking. Shake off any extra water and let it sit in the colander while you prep the rest.
Step 2: Spiralize the Zucchini

While the pasta cooks, spiralize the 2 zucchini using the thickest blade your spiralizer has. You should end up with about 4 cups of firm, noodle-like strands. Pat them lightly with a paper towel if they look very wet, but do not salt or squeeze them.
The zucchini will release a little moisture as the salad sits, but the dressing and starch from the pasta make it cling instead of pooling at the bottom.
Step 3: Whisk the Dressing

In a large bowl, whisk together the 3 tbsp olive oil, 2 tbsp lemon juice, 1 tsp lemon zest, the minced garlic clove, ½ tsp salt, and ¼ tsp pepper. Let it sit for a minute while you gather the other ingredients so the garlic softens.
The dressing will look thin, but it thickens slightly once it coats the pasta and zucchini.
Step 4: Combine Everything in the Bowl

Add the cooled pasta, spiralized zucchini, and 1 cup halved cherry tomatoes to the bowl with the dressing. Toss gently with your hands or two big spoons until every piece is coated. Fold in half of the crumbled feta and half of the torn basil.
At this stage the salad might seem a little dry, but resist adding more olive oil. The vegetables will release moisture as they chill.
Step 5: Chill and Toss It Again

Cover the bowl and refrigerate for at least 15 minutes, or up to a few hours. Just before serving, uncover, add the remaining feta and basil, and toss once more to redistribute the dressing. Pile it into a wide serving bowl and serve cold or cool room temperature.
The finished salad will be glossy with lemon dressing, studded with red tomatoes and white feta, and the zucchini ribbons will still have a gentle snap.
Tips for a Crisp, Not Soggy Salad
- Do not salt the raw zucchini.: It draws out water and makes the noodles limp. The pasta and dressing handle any moisture just fine without it.
- Stick with short pasta shapes.: Long noodles compete with the zucchini strands and tangle into a mess.
- Assemble no more than 6 hours ahead.: The zucchini stays crisp for a full day, but the basil and feta are best added at the end.
- If the salad absorbed too much liquid in the fridge, toss it with an extra teaspoon of lemon juice and a drizzle of olive oil right before serving.
Scale it up for a potluck:
| Servings | Pasta | Zucchini | Olive Oil | Lemon Juice |
|---|---|---|---|---|
| 8 | 1 lb | 4 medium | 6 tbsp | 4 tbsp |
| 12 | 1½ lb | 6 medium | ½ cup | ⅓ cup |
Storing Leftovers
- Refrigerate: the salad in an airtight container for up to 3 days. The zucchini stays crisp, but the basil will darken, so store any extra basil separately and add it when you re-serve.
- Serve cold: straight from the fridge. This salad never needs reheating, which makes it a reliable lunch the next day.
What Goes Well With Zucchini Pasta Salad
I serve this alongside grilled chicken thighs or simple pan-seared salmon because the lemon in the salad mirrors a squeeze you would add to either protein anyway. It also works next to a thick slice of frittata or piled onto a plate with grilled sausages. The cool, tangy crunch cuts through anything rich or smoky.
Frequently Asked Questions
Can I use frozen zucchini noodles?
No, frozen zoodles turn mushy once thawed. Stick with fresh zucchini and spiralize it yourself.
Do I have to use feta cheese?
Not at all, but a crumbly salty cheese like feta or even queso fresco gives a nice contrast to the lemon. If you skip cheese, add a handful of toasted almonds or pine nuts for richness.
Is this salad good at room temperature?
Yes, it is actually best after 15 to 20 minutes out of the fridge when the dressing loosens up. Keep it cool for food safety if it sits out longer than 2 hours.
Can I make it gluten-free?
Yes, swap the pasta with a chickpea or lentil-based short pasta and cook it al dente per the package directions.
