Toss the 1.2 kg (2.6 lb) sweet potato cubes and 800 g (30 oz) drained chickpeas with 45 ml (3 tbsp) olive oil, 2 tsp cumin, 1 tsp coriander, 1 tsp salt and 1/2 tsp red pepper flakes, then spread them out so both sheets have room to brown.
Step 2: Roast for 25 to 30 minutes, shaking the sheets once at the 15 minute mark, until the sweet potatoes are tender and the chickpeas are crisp at the edges. Let them cool completely on the sheets while you cook the farro, because warm vegetables in a sealed container will steam and turn soft.

Step 6: Warm one portion in a bowl when you are ready to eat, spoon one jar of the tahini dressing over the top, and toss everything together right before you eat so the leaves stay bright and the farro does not soak up all the sauce.
The technique that matters most is giving sweet potatoes enough room on the pan. Crowding steams them instead of caramelising the edges, so use two sheets if you need to and let the underside get genuinely brown.
