How to Make Sheet Pan Lasagna
Step 1: Brown the Meat

Heat your oven to 425°F (220°C). Set a large skillet over medium-high heat, add the 1 tbsp olive oil, and crumble in the 1 lb ground beef. Cook for about 5 minutes, breaking it up with a spoon, until it loses its pink color and starts to get some brown edges.
Stir in the diced onion and cook another 3 minutes, then add the 3 minced garlic cloves and cook 30 seconds, just until fragrant. Pour in the jar of marinara sauce, bring it to a simmer, and take the pan off the heat.
Step 2: Mix the Ricotta Filling

In a medium bowl, combine the 15 oz ricotta, the large egg, 3/4 cup of the shredded mozzarella (save the rest for the top), the 1/2 cup grated Parmesan, the 1/2 tsp kosher salt, and the 1/4 tsp black pepper. Stir until smooth.
The mixture should look pale and creamy with small flecks of cheese. Taste it and add a pinch more salt if it feels flat; remember the sauce and mozzarella will bring salt too.
Step 3: Layer the Lasagna

Spread about 1 cup of the meat sauce across the bottom of a standard 18×13-inch half sheet pan. Lay 3 no-boil lasagna sheets over the sauce; they won’t cover the whole surface, and that’s fine.
