- Boneless skinless chicken breasts, cut into chunks: 1.4 kg (3 lb)
- Frozen mixed vegetables (peas, carrots, corn, green beans): 600 g (4 cups)

Step 1: Season the chicken chunks with 1 tsp salt and 1/2 tsp pepper, then place them in the slow cooker with the frozen mixed vegetables, diced onion, diced celery, and minced garlic. You want everything distributed so each freezer bag gets an equal mix.
Step 2: Whisk the 60 g (1/2 cup) flour into the 720 ml (3 cups) chicken stock until no lumps remain, then pour it in with the 240 ml (1 cup) milk and 1 tsp dried thyme. Stir once, and you will see the sauce look very thin before the slow cooker starts its work.
Step 3: Cover and cook on low for 6 hours or on high for 3 hours, until the chicken is cooked through and the sauce has thickened to a gravy. If you taste it now, it should be well seasoned but not salty, because the flavours will concentrate slightly after freezing.
Step 4: Let the filling cool completely at room temperature for no more than 2 hours, then divide it between two large freezer bags. Press each one flat so it freezes into a thin slab, and label it with the date. You can lay them on a baking sheet to freeze solid overnight.
Step 5: To reheat, thaw one bag overnight in the fridge or place the frozen slab in a pot over low heat with 60 ml (1/4 cup) water, breaking it up as it warms. You want it to simmer gently until hot, about 15 minutes.
Step 6: Serve the bubbling filling over warm biscuits, split open on the plate, or with toasted bread for dunking. You can top it with a spoonful of sour cream if you like, but the gravy already does plenty.
