The one thing to watch across all of these is the sauce at the two-hour mark. If it looks too thick, leave the lid on and add a splash of water or stock. If it is too thin, take the lid off on warm for ten minutes.
Then pick whichever recipe sounds like tonight, set out the toothpicks, and let the slow cooker do the rest.
