Lemon Blueberry Coffee Cake with Crumb Topping
A tender lemon-scented cake studded with juicy blueberries and finished with a buttery crumb topping that gets a little crisp in the oven. It’s the kind of cake you can throw together on a Saturday morning and still feel like you did something special.

The sour cream keeps it moist for days, and the bright lemon cuts through the richness. Works for breakfast, an afternoon snack, or a simple dessert.
What Makes This Coffee Cake So Good
The cake itself has a tight, tender crumb, and the crumb topping stays nicely crisp even after a day in the fridge. Fresh blueberries turn jammy as they bake, and every other bite includes a little burst of lemon zest.
It’s unfussy, too. One bowl for the batter, a quick mix for the topping, no mixer required. It’s my go-to when I want a homemade cake that looks and tastes like I fussed, but I really didn’t.
Ingredients

Cake
- 2 cups all-purpose flour: spooned and leveled, plus 1 tbsp for the blueberries
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened: let it sit out until it dents when pressed
- 1 cup granulated sugar
- 2 large eggs, room temperature: cold eggs can make the batter curdle
- 2 tsp lemon zest: from about 2 lemons
- 1/4 cup fresh lemon juice
- 1 cup sour cream, at room temperature: full fat gives the best texture
- 1 1/2 cups fresh blueberries: frozen work, see Variations
Crumb Topping
- 1/2 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1/4 cup unsalted butter, cold and cut into small cubes
- 1/2 tsp ground cinnamon
- Pinch of salt
Variations / Substitutions
- Frozen blueberries: keep them frozen and do not thaw. Toss with the extra flour right before folding in.
- Greek yogurt: swap the sour cream with full-fat plain Greek yogurt, the cake will be slightly tangier but still moist.
- Lemon extract: use 1 tsp lemon extract in place of the zest, or do half extract and half zest for more punch.
- Almond twist: add 1/2 tsp almond extract along with the lemon for a subtle nutty note.
- Raspberries: replace half the blueberries with raspberries for a tarter mix.

How to Make Lemon Blueberry Coffee Cake
Step 1: Make the Crumb Topping

Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper. In a small bowl, combine the 1/2 cup flour, brown sugar, cinnamon, and a pinch of salt. Add the 1/4 cup cold butter cubes and cut them in with a fork or your fingers until the mixture looks like coarse sand with some pea-sized bits.
The crumb should feel sandy but hold together when you squeeze a handful. Pop it in the fridge while you make the batter; keeping the butter cold helps the topping stay crumbly instead of melting into the cake.
Step 2: Combine the Dry Ingredients

In a medium bowl, whisk together the 2 cups flour, baking powder, baking soda, and salt until no streaks remain. Set it aside.
Whisking now means you won’t bite into a bitter pocket of baking soda later. The mix will be added in stages, so having it ready keeps the batter from sitting while you measure.
Step 3: Cream the Butter and Sugar

In a large bowl, beat the 1/2 cup softened butter and the 1 cup sugar with a wooden spoon or hand mixer until it looks light in color and fluffy, about 2 to 3 minutes. Add the 2 eggs one at a time, beating well after each so they emulsify into the butter.
Beat in the lemon zest and the 1/4 cup lemon juice. The batter may look slightly separated at this point, that’s normal. The sour cream will bring it back together.
Step 4: Finish the Batter

Add the dry ingredients in three additions, alternating with the 1 cup sour cream in two additions, starting and ending with the dry. Stir just until no flour streaks remain. Toss the blueberries with the remaining 1 tbsp flour, then gently fold them into the thick batter with a spatula. A few white flour streaks are okay, overmixing will make the cake tough.
The batter will be thick and studded with berries. If you see a tiny smear of flour here and there, it will disappear in the oven.
Step 5: Layer and Bake the Cake

Scrape the batter into the prepared pan and smooth the top. Remove the crumb topping from the fridge and scatter it evenly over the batter, squeezing some together to create larger clumps. Bake for 45 to 50 minutes, until the top is deep golden and a toothpick inserted in the center comes out with a few moist crumbs but no wet batter.
The edges will pull away slightly from the pan, and the kitchen will smell like warm lemon and brown sugar. Let the cake cool in the pan on a rack for 15 minutes before loosening the springform ring.
Step 6: Cool and Slice the Cake

Run a thin knife around the edge, then release the springform and transfer the cake to a serving plate. Dust generously with powdered sugar right before serving. Slice into wedges while still slightly warm, or let it cool completely if you want neater cuts.
The sugar drifts over the golden crumb and the purple berries peek through. Serve with coffee or tea, and know the second slice is already in your future.
Tips for the Best Coffee Cake
- Room temperature ingredients matter: cold eggs or sour cream can make the butter seize up, leaving tiny lumps of unmixed fat in the batter. Take everything out 30 minutes before you start.
- Don’t skip the flour coating for the blueberries: it helps suspend them in the batter so they don’t all sink to the bottom.
- Check the cake early: if your oven runs hot, start testing at 40 minutes. The crumb topping can darken quickly, so tent with foil if it’s browning too fast.
- Cool before slicing for clean edges: the cake is fragile when hot, so letting it cool at least 15 minutes in the pan gives the crumb time to set.
Bake times by pan:
| Pan | Bake Time |
|---|---|
| 9-inch springform pan | 45-50 mins |
| 8-inch square pan | 40-45 mins |
| 9×5-inch loaf pan | 55-60 mins |
Storing Leftovers
Refrigerate: Store the cake in an airtight container at room temperature for up to 3 days, or in the fridge for up to 5 days. The crumb topping loses a little crunch over time, but the flavor stays bright.
Reheating: Warm slices in the microwave for 15 to 20 seconds, or place them in a 300°F oven for 5 minutes to re-crisp the topping.
Serve Cold: Straight from the fridge, the lemon flavor is sharper and the cake feels a bit denser. It’s good either way.
Frequently Asked Questions
Can I use lemon extract instead of fresh zest?
Yes. Replace the 2 tsp zest with 1 tsp lemon extract. The flavor will be more straightforward, but still bright. Fresh zest gives a more rounded citrus note.
Can I make this with oil instead of butter?
I don’t recommend it. The butter contributes flavor and the solid fat structure that makes the crumb tender. Oil would make the cake greasy and the topping won’t hold its crumbly texture.
Can I freeze this coffee cake?
Yes. Wrap the cooled cake tightly in plastic wrap and foil, and freeze for up to 2 months. Thaw at room temperature, then warm slightly before serving if you like.
Can I skip the crumb topping?
You can, but you’ll miss the crunch. The cake itself is moist and lovely, but the contrast is half the fun. If you skip it, check for doneness a few minutes earlier.
