  1. Karen Conover says:

Could I use avocado oil and applesauce to replace the butter? Also wondering if a small amount of xanthan gum is needed?

    1. Emily Johnson says:

Yes, but use them a little differently:

Avocado oil: You can replace the melted butter 1:1, so use (1/3) cup avocado oil. The bread will still be moist, though it will have slightly less buttery flavor.
Applesauce: It adds moisture but also natural sugar/carbs, so it is not usually ideal for strict keto. If you want to use it, replace only part of the fat:- Use (1/4) cup avocado oil + (2) tablespoons unsweetened applesauce in place of the (1/3) cup butter.
Do not replace all of the butter with applesauce; the loaf may become too wet, gummy, and less rich.

If you use applesauce, choose unsweetened and expect the loaf to be somewhat higher in carbs.

Xanthan gum is optional, not necessary. Eggs plus almond flour provide enough structure for this loaf, especially once fully cooled. If your almond flour tends to produce a crumbly loaf, you can add (1/4) teaspoon xanthan gum with the dry ingredients.
