Step 1: Warm the 1 tbsp olive oil in a skillet over medium heat, then you’ll crumble in the 450 g (1 lb) Italian turkey sausage and cook for 5 minutes, until it loses its pink color. Your spoon should break it into small pieces as it cooks.
Step 2: Scrape the sausage into your slow cooker, add the 1 diced onion, 3 minced garlic cloves, 300 g (1.5 cups) orzo, 1 L (4 cups) chicken broth, 1/2 tsp salt, and 1/2 tsp pepper. Stir once, then set to low for 2 hours, until the orzo is just tender and most of the liquid is absorbed.
Step 3: Fold in the 120 g (4 oz) cream cheese and 150 g (5 oz) spinach, then let them sit for 5 minutes so the spinach wilts and the sauce thickens. You’ll see the broth turn creamy as you stir.
Step 4: Spoon the orzo into bowls and finish with the 60 g (2/3 cup) parmesan. You’ll want to eat it while it is still soft and hot.
Browning the sausage well is the one step that most determines success across all these recipes. Those browned bits carry the deep savory base, and the slow cooker cannot create them on its own.
