Cheesy Chicken Broccoli Casserole
This is the one I make most when I want a casserole that tastes like a full dinner and actually has enough protein to matter. Creamy and cheesy, with broccoli that keeps it from feeling heavy.

Ingredients (makes 6 servings)
- Boneless skinless chicken breasts, cut into 2 cm cubes: 680 g (1 1/2 lb)
- Broccoli florets: 450 g (1 lb)
- Cooked long grain rice: 400 g (2 cups)
- Cottage cheese: 450 g (2 cups)
- Cheddar cheese, shredded: 225 g (2 cups)
- Milk: 240 ml (1 cup)
- Garlic powder: 1 tsp
- Onion powder and salt: 1 tsp each
- Black pepper: 1/2 tsp
- Vegetable oil, for the dish: 1 tbsp
Instructions
Step 1: Heat the oven to 190C (375F). Toss the 680 g chicken cubes with the 1 tbsp oil, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, and 1/2 tsp pepper, then spread them in an even layer in a 23×33 cm (9×13 in) baking dish. Bake for 15 minutes while you prep the rest.
Step 2: Meanwhile, stir together 450 g cottage cheese, 240 ml milk, and half of the 225 g cheddar in a large bowl. Fold in 450 g broccoli florets and 400 g cooked rice until everything is coated. You want the mixture to look creamy but not soupy.
Step 3: Pull the dish out after 15 minutes and spoon the rice mixture over the chicken. Sprinkle the remaining cheddar on top, then cover the dish with foil and bake for 25 minutes, until you can hear the sauce bubbling when you press the foil lightly.
Step 4: Uncover and bake another 10 to 12 minutes, until the top is golden in spots. The edges should look set, so you can pull it out with confidence.
Step 5: Let the casserole rest for 5 minutes before you scoop it onto plates. Serve hot, and a little extra black pepper on top is a good idea.
High Protein Baked Ziti
This one leans on cottage cheese and lean ground beef to raise the protein without a heavy cream sauce. It tastes like traditional baked pasta, just more filling and less greasy.

Ingredients (makes 8 servings)
- Dried ziti or penne: 450 g (1 lb)
- Lean ground beef: 680 g (1 1/2 lb)
- Marinara sauce: 700 ml (3 cups)
- Cottage cheese: 450 g (2 cups)
- Mozzarella cheese, shredded: 225 g (2 cups)
- Parmesan cheese, grated: 50 g (1/2 cup)
- Egg: 1 large
- Salt, garlic powder, and Italian seasoning: 1/2 tsp, 1 tsp, and 2 tsp
- Vegetable oil, for the skillet: 1 tbsp
Instructions
Step 1: Heat the oven to 190C (375F). Cook 450 g ziti in salted boiling water 2 minutes less than the package directs, then drain it. You want the centers still a little firm because they finish cooking in the oven.
Step 2: While the pasta cooks, warm 1 tbsp oil in a large skillet over medium high. Add 680 g ground beef and cook 6 to 8 minutes, breaking it up with a spoon, until you no longer see pink. Stir in 700 ml marinara and the salt, garlic powder, and Italian seasoning, then turn off the heat.
Step 3: In a big bowl, whisk 1 egg and 450 g cottage cheese until smooth. Add 50 g parmesan, the drained pasta, and the beef sauce, and fold until every piece is coated. You should see no dry patches.
Step 4: You scrape half the mixture into a 23×33 cm (9×13 in) baking dish, top with half of the 225 g mozzarella, repeat, and finish with the last mozzarella. Cover with foil and bake for 25 minutes, then uncover and bake 8 to 10 more until you see the cheese browned at the edges.
Step 5: Rest 5 minutes before you cut into squares. Serve with extra parmesan and a handful of chopped parsley if you have it.
Creamy Cottage Cheese Chicken Casserole
I use blended cottage cheese here to make a high protein sauce that tastes richer than it is. This version is for anyone who wants creamy without a can of soup, and it keeps the carbs low.

Ingredients (makes 4 servings)
- Cooked shredded chicken breast: 600 g (4 cups)
- Cottage cheese: 500 g (2 cups)
- Plain Greek yogurt: 120 g (1/2 cup)
- Frozen peas and carrots: 300 g (2 cups)
- Cauliflower rice: 400 g (4 cups)
- Cheddar cheese, shredded: 180 g (1 1/2 cups)
- Garlic powder: 1 tsp
- Onion powder, salt, and black pepper: 1 tsp, 1/2 tsp, and 1/2 tsp
- Vegetable oil, for the dish: 1 tsp
Instructions
Step 1: Heat the oven to 200C (400F) and grease a 20×20 cm (8×8 in) baking dish with 1 tsp oil. You want the whole bottom and sides coated.
Step 2: Blend 500 g cottage cheese, 120 g yogurt, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp salt, and 1/2 tsp pepper in a food processor until smooth, about 30 seconds. You want no curds left, just a thick pourable sauce.
Step 3: In a large bowl, fold the blended sauce with 600 g chicken, 300 g peas and carrots, and 400 g cauliflower rice. Scrape it into the dish and spread the top level so you get even browning.
Step 4: Sprinkle 180 g cheddar over the top, then bake 25 to 30 minutes, until you see the edges bubble and the top turn lightly golden in spots.
Step 5: Let it sit 5 minutes, then scoop into shallow bowls. You can finish with a little fresh parsley or chives if you want color.
Spicy Turkey Black Bean Casserole
This is the one I reach for when I want heat and plenty of leftovers. Ground turkey soaks up the chipotle and tomato sauce, and black beans add extra protein and fibre.

Ingredients (makes 6 servings)
- Lean ground turkey: 680 g (1 1/2 lb)
- Cooked brown rice: 500 g (2 1/2 cups)
- Black beans, drained and rinsed: 425 g (1 can)
- Crushed tomatoes: 400 g (1 can)
- Diced tomatoes with green chilies: 400 g (1 can)
- Chipotle pepper in adobo, minced: 1 tbsp
- Ground cumin: 2 tsp
- Smoked paprika: 1 tsp
- Pepper jack or mozzarella cheese, shredded: 180 g (1 1/2 cups)
- Vegetable oil, for the skillet: 1 tbsp
Instructions
Step 1: Heat the oven to 200C (400F). In a large oven safe skillet, heat 1 tbsp oil over medium high. Add 680 g turkey and cook 6 minutes, breaking it up, until you no longer see pink.
Step 2: Stir in 425 g black beans, 400 g crushed tomatoes, 400 g diced tomatoes with green chilies, 1 tbsp chipotle, 2 tsp cumin, and 1 tsp smoked paprika, and simmer for 5 minutes while you watch it thicken. Fold in 500 g cooked brown rice once the sauce looks glossy.
Step 3: Sprinkle 180 g cheese over the top. If your skillet is oven safe, you can leave it; if not, scrape the mixture into a baking dish first.
Step 4: Bake 20 minutes, until the cheese is melted and the sauce bubbles up around the edges. You will smell the chipotle before the timer goes off.
Step 5: Rest 5 minutes, then serve with diced avocado and a spoon of plain Greek yogurt if you like cool contrast.
Beef and Lentil Taco Casserole
Lean ground beef and lentils act like partners here, so you get a taco filling that stays moist without extra fat. Crushed tortilla chips on top give it the crunch that taco night needs.

Ingredients (makes 8 servings)
- Lean ground beef: 900 g (2 lb)
- Cooked brown lentils: 400 g (2 cups)
- Black beans, drained and rinsed: 425 g (1 can)
- Corn kernels, frozen or canned drained: 200 g (1 1/2 cups)
- Tomato sauce: 480 ml (2 cups)
- Taco seasoning: 2 tbsp
- Tortilla chips, crushed: 100 g (2 cups)
- Cheddar cheese, shredded: 225 g (2 cups)
- Vegetable oil, for the skillet: 1 tbsp
Instructions
Step 1: Heat the oven to 190C (375F). Warm 1 tbsp oil in a large skillet over medium high and brown 900 g beef, 7 to 8 minutes, breaking it up. You want it crumbly and fully cooked.
Step 2: Stir in 2 tbsp taco seasoning, 400 g lentils, 425 g black beans, 200 g corn, and 480 ml tomato sauce. Simmer 5 minutes, until you can draw a line through the pan and the sauce does not rush back.
Step 3: Scrape the mixture into a 23×33 cm (9×13 in) dish and top with 225 g cheddar. You can cover and refrigerate overnight at this point if you like.
Step 4: Scatter 100 g crushed tortilla chips over the cheese. Bake 20 minutes, until the cheese melts and the chips turn a shade darker. You want the chips to keep their crunch, so watch them in the last 5 minutes.
Step 5: Let it rest 5 minutes, then scoop big spoonfuls onto plates. Serve with shredded lettuce, salsa, or sour cream according to your mood.
Tuna Noodle High Protein Casserole
This is a faster, lighter take on the classic tuna noodle, using Greek yogurt and cottage cheese for the sauce. It keeps the familiar egg noodle texture and adds way more protein than the canned soup version.

Ingredients (makes 4 servings)
- Canned tuna in water, drained: 340 g (12 oz)
- Egg noodles: 225 g (8 oz)
- Frozen peas: 150 g (1 cup)
- Cottage cheese: 450 g (2 cups)
- Plain Greek yogurt: 120 g (1/2 cup)
- Milk: 120 ml (1/2 cup)
- Cheddar cheese, shredded: 120 g (1 cup)
- Onion, finely diced: 1 small
- Garlic powder, salt, and black pepper: 1 tsp, 1/2 tsp, and 1/2 tsp
- Vegetable oil, for the dish: 1 tsp
Instructions
Step 1: Heat the oven to 190C (375F). Cook 225 g egg noodles in salted water 1 minute less than the package says, then drain. You want them slightly firm so they hold up in the sauce.
Step 2: Meanwhile, blend 450 g cottage cheese, 120 g yogurt, 120 ml milk, garlic powder, salt, and pepper until smooth. You should not see any curds.
Step 3: In a large bowl, combine the drained noodles, 340 g tuna, 150 g peas, and diced onion. Fold in the sauce gently so you do not mash the tuna into paste.
Step 4: Grease a 20×20 cm (8×8 in) dish with 1 tsp oil, scrape in the mixture, and top with 120 g cheddar. Bake 20 to 25 minutes, until you see the edges bubbling and the top is lightly golden.
Step 5: Let it sit 5 minutes, then scoop out portions. You can finish with a squeeze of lemon and a good crack of black pepper.
Greek Chicken and Quinoa Casserole
This one goes bright instead of heavy, with lemon, oregano, and feta. Cooked quinoa absorbs the tomato and chicken juices, and it holds its shape better than rice on day two.

Ingredients (makes 5 servings)
- Boneless skinless chicken thighs, cut into bite size pieces: 700 g (1 1/2 lb)
- Cooked quinoa: 500 g (3 cups)
- Fresh spinach: 150 g (5 cups)
- Cherry tomatoes, halved: 300 g (2 cups)
- Red onion, thinly sliced: 1 medium
- Chicken stock: 480 ml (2 cups)
- Feta cheese, crumbled: 150 g (1 cup)
- Garlic cloves, dried oregano, salt, and black pepper: 3 cloves, 2 tsp, 1/2 tsp, and 1/2 tsp
- Lemon: 1, zested and juiced
- Olive oil, for the pan and chicken: 2 tbsp
Instructions
Step 1: Heat the oven to 200C (400F). In a large bowl, toss 700 g chicken with 1 tbsp oil, 3 minced garlic cloves, 2 tsp oregano, the lemon zest, 1/2 tsp salt, and 1/2 tsp pepper. Let it sit while you prep the vegetables.
Step 2: Warm the remaining 1 tbsp oil in a wide oven safe pan over medium high. Add the chicken and cook 5 minutes, until you see it turn golden on the outside but still pink in the middle.
Step 3: Turn off the heat and stir in 500 g quinoa, 300 g tomatoes, 150 g spinach, the sliced red onion, 480 ml stock, and the lemon juice. You want the spinach just beginning to wilt around the edges.
Step 4: Top with 150 g feta and bake 20 to 25 minutes, until you see the liquid is mostly absorbed and the edges look set.
Step 5: Rest 5 minutes, then serve straight from the pan with extra lemon wedges. You get a soft, almost risotto-like texture.
Buffalo Chicken Cauliflower Casserole
This one turns buffalo chicken into a high protein casserole, with cauliflower rice doing the work of pasta while you keep the heat and tang. I use blue cheese on top, but cheddar works if that is what you prefer.

Ingredients (makes 4 servings)
- Cooked shredded chicken breast: 700 g (1 1/2 lb)
- Cauliflower rice, fresh or thawed frozen: 500 g (5 cups)
- Cream cheese, softened: 180 g (6 oz)
- Plain Greek yogurt: 120 g (1/2 cup)
- Hot sauce: 120 ml (1/2 cup)
- Celery, thinly sliced: 150 g (1 1/2 cups)
- Green onions, sliced: 50 g (1/2 cup)
- Blue cheese or cheddar, crumbled or shredded: 120 g (1 cup)
- Garlic powder and salt: 1 tsp and 1/2 tsp
- Vegetable oil, for the dish: 1 tsp
Instructions
Step 1: Heat the oven to 200C (400F) and grease a 23×23 cm (9×9 in) dish with 1 tsp oil. Spread 500 g cauliflower rice in the bottom, pressing lightly so you have an even layer.
Step 2: In a saucepan over low heat, melt 180 g cream cheese with 120 g yogurt and 120 ml hot sauce, stirring 3 minutes until smooth. You want it velvety and warm, not boiling.
Step 3: Fold 700 g chicken, 150 g celery, garlic powder, and salt into the sauce. Spread this over the cauliflower rice so you cover the whole surface.
Step 4: Scatter 120 g blue cheese and 50 g green onions on top. Bake 25 to 30 minutes, until the casserole is bubbling and you see a little browning at the edges.
Step 5: Let it rest 5 minutes, then scoop into bowls. Serve with extra celery sticks and a drizzle of hot sauce if you want more heat.
Lemon Herb Salmon and Rice Casserole
This is a lighter casserole that still brings real protein, using salmon fillets laid over a lemony rice and vegetable base. You get crisp salmon edges and a rice layer that steams under it.

Ingredients (makes 5 servings)
- Salmon fillets, skin removed: 750 g (1 1/2 lb)
- Cooked long grain rice: 600 g (3 cups)
- Broccoli florets, small: 300 g (2 cups)
- Red bell pepper, diced: 1 large
- Chicken stock: 360 ml (1 1/2 cups)
- Lemon: 2, one sliced and one zested and juiced
- Greek yogurt: 120 g (1/2 cup)
- Fresh dill, chopped: 2 tbsp
- Garlic powder, salt, and black pepper: 1 tsp, 1/2 tsp, and 1/2 tsp
- Olive oil, for the salmon and rice: 2 tbsp
Instructions
Step 1: Heat the oven to 200C (400F). In a 23×33 cm (9×13 in) dish, stir together 600 g rice, 300 g broccoli, the diced pepper, lemon zest, 360 ml stock, 120 g yogurt, dill, garlic powder, salt, and pepper. You want the mixture evenly moist.
Step 2: You rub 750 g salmon with 1 tbsp olive oil and season it, then lay the fillets on top of the rice mixture in a single layer. You want the fish to stay above the liquid so the top dries out slightly.
Step 3: Tuck the lemon slices around the salmon and drizzle the remaining 1 tbsp oil over everything. Cover with foil and bake for 25 minutes, while you check after 20 if your oven runs hot.
Step 4: Uncover and bake 10 more minutes, until the salmon flakes when you press it with a fork and the rice has absorbed the liquid. You can test a thick part with the tip of a knife.
Step 5: Rest 5 minutes, then squeeze fresh lemon juice over the top and serve. You want a little salmon, rice, and broccoli in every spoonful.
Korean Beef and Kimchi Casserole
Kimchi brings a tangy heat that cuts through lean ground beef, and the egg yolks on top make it feel like a full meal. Gochujang and rice vinegar keep the sauce glossy without weighing it down.

Ingredients (makes 6 servings)
- Lean ground beef: 900 g (2 lb)
- Kimchi, chopped: 400 g (2 cups)
- Cooked medium grain rice: 600 g (3 cups)
- Large eggs: 6
- Onion, thinly sliced: 1 large
- Garlic cloves, minced: 4
- Gochujang, soy sauce, and rice vinegar: 3 tbsp, 3 tbsp, and 2 tbsp
- Sesame oil: 1 tbsp
- Vegetable oil, for the skillet: 1 tbsp
- Green onions, sliced: 50 g (1/2 cup)
Instructions
Step 1: Heat the oven to 190C (375F). In a large oven safe skillet, heat 1 tbsp vegetable oil over medium high. Add 900 g beef and cook 6 to 7 minutes, breaking it up, until you see brown bits forming on the bottom.
Step 2: Stir in the sliced onion and 4 minced garlic cloves, then cook 3 minutes. Add 400 g kimchi, 3 tbsp gochujang, 3 tbsp soy sauce, and 2 tbsp rice vinegar, and simmer 4 minutes, until the sauce looks glossy and you can smell the kimchi sweetening.
Step 3: Turn off the heat and fold in 600 g cooked rice and 1 tbsp sesame oil. You make 6 wells with the back of a spoon, then crack an egg into each well.
Step 4: Transfer the skillet to the oven and bake 10 to 12 minutes, until the egg whites are set but you can see the yolks are still soft.
Step 5: Rest 3 minutes, scatter 50 g green onions over the top, and serve in shallow bowls. You can break the yolk so it mixes into the rice as you eat.
Vegetarian Chickpea and Paneer Casserole
This is the casserole I make when a vegetarian friend comes over and everyone else still wants something substantial. Chickpeas and paneer give you two different proteins, and the tomato sauce takes on all the warm spices.

Ingredients (makes 6 servings)
- Chickpeas, drained and rinsed: 850 g (2 cans)
- Paneer, cut into 2 cm cubes: 350 g (12 oz)
- Fresh spinach, roughly chopped: 200 g (6 cups)
- Diced canned tomatoes: 800 g (2 cans)
- Red bell pepper, diced: 1 large
- Onion, finely chopped: 1 large
- Garlic cloves, minced: 4
- Garam masala, ground cumin, and ground coriander: 1 tbsp, 2 tsp, and 2 tsp
- Vegetable oil, for the pan: 2 tbsp
- Plain Greek yogurt, for serving: 120 g (1/2 cup)
Instructions
Step 1: Heat the oven to 200C (400F). In a large oven safe pot, heat 1 tbsp oil over medium high. Add 350 g paneer cubes and fry 3 to 4 minutes, turning once, until you see golden on two sides. Lift them out with a slotted spoon and set aside.
Step 2: Add the remaining 1 tbsp oil, onion, and pepper. Cook 5 minutes, until the vegetables soften. Stir in 4 minced garlic cloves, 850 g chickpeas, 1 tbsp garam masala, 2 tsp cumin, and 2 tsp coriander, then simmer 10 minutes with the tomatoes until you have a thick sauce.
Step 3: Fold 200 g spinach and the browned paneer into the sauce. The spinach will wilt fast, about 1 minute, so you can turn off the heat once it is just soft.
Step 4: Transfer the pot to the oven, uncovered, and bake 15 minutes, until the top looks caramelized around the edges. You can simmer on the stove if you prefer a saucier result, but the oven adds color.
Step 5: Rest 5 minutes, then serve in bowls with 120 g Greek yogurt spooned on top. You get creamy, spiced, and bright in the same scoop.
Mini Turkey Parmesan Casserole Bites
These little casserole bites are the format change you want for game day or a quick high protein snack. They bake in a muffin tin, so every edge gets golden and you do not have to cut a single serving.

Ingredients (makes 16 bites)
- Lean ground turkey: 680 g (1 1/2 lb)
- Cooked quinoa: 300 g (1 1/2 cups)
- Marinara sauce: 240 ml (1 cup)
- Mozzarella cheese, shredded: 180 g (1 1/2 cups)
- Parmesan cheese, grated: 50 g (1/2 cup)
- Egg: 1 large
- Garlic powder: 1 tsp
- Dried oregano: 1 tsp
- Salt and black pepper: 1/2 tsp each
- Vegetable oil, for the tin: 2 tsp
Instructions
Step 1: Heat the oven to 200C (400F). Lightly oil 16 cups of a muffin tin with 2 tsp oil, using a paper towel so you get the sides too.
Step 2: In a large bowl, combine 680 g turkey, 300 g quinoa, 1 egg, 240 ml marinara, half of the 180 g mozzarella, 50 g parmesan, garlic powder, oregano, salt, and pepper. Mix with your hands until just combined, about 30 seconds; you do not want to overwork it.
Step 3: Divide the mixture among the prepared cups, pressing gently so each one is full just below the top. You can use a cookie scoop to keep the bites even.
Step 4: Top each bite with the remaining mozzarella, then bake 18 to 22 minutes. You want the centers to reach 74C (165F) and the tops to turn golden.
Step 5: Let them cool 5 minutes in the tin, then run a thin knife around each one and lift it out. Serve warm with extra marinara for dipping.
Make-Ahead Chicken Enchilada Casserole
This freezer friendly casserole is assembled in two pans, so you bake one now and one later. The chicken filling stays moist in red sauce, and the corn tortillas soak up just enough liquid without turning mushy.

Ingredients (makes 2 freezer pans, 4 servings each)
- Boneless skinless chicken thighs, cut into bite size pieces: 1.4 kg (3 lb)
- Corn tortillas, cut into quarters: 700 g (12 tortillas)
- Enchilada sauce: 960 ml (4 cups)
- Black beans, drained and rinsed: 850 g (2 cans)
- Frozen corn kernels: 300 g (2 cups)
- Cheddar or Monterey Jack cheese, shredded: 450 g (4 cups)
- Onion, diced: 1 large
- Garlic cloves, minced: 4
- Ground cumin and dried oregano: 2 tsp and 1 tsp
- Vegetable oil, for the skillet: 2 tbsp
Instructions
Step 1: Heat 1 tbsp oil in a large skillet over medium high. Add 1.4 kg chicken, 1 diced onion, 4 minced garlic cloves, 2 tsp cumin, and 1 tsp oregano. Cook 6 to 7 minutes, until the outside of the chicken no longer looks pink. You do not need to cook it through yet.
Step 2: Stir in 960 ml enchilada sauce, 850 g beans, and 300 g corn. Simmer 5 minutes, then turn off the heat. You can taste it here and add a little extra cumin if you like.
Step 3: In two 20×20 cm (8×8 in) foil pans, layer a thin coat of the sauce, then 700 g quartered tortillas, more sauce, and a sprinkle of cheese. Repeat until you finish the sauce and tortillas, reserving 1/3 of the 450 g cheese for the tops.
Step 4: Let one pan cool completely, wrap it tightly in foil, label it, and freeze for up to 2 months. The other pan you bake right away at 200C (400F) for 25 minutes, then uncover, top with its reserved cheese, and bake 5 more minutes until melted.
Step 5: Rest 5 minutes, then scoop out portions from the baked pan. If you bake the frozen one, keep it covered for the first 15 extra minutes and check that the center is hot before you serve.
The most important step in any high protein casserole is not overcooking the meat before it goes into the oven. Brown it just enough, and it will finish gently in the sauce so it stays tender.
Pick one version, read it all the way through once, and get your dish into the oven. You have dinner handled.
