Step 4: Toss the drained penne with the meatball sauce. Divide it between 2 large freezer bags or foil pans, and let it cool completely before you seal it.
Step 5: Label each bag and freeze for up to 3 months. When you are ready to cook, thaw one bag overnight in the fridge and preheat your oven to 190C (375F).
Step 6: Spread the thawed pasta into a baking dish and top with the 340 g (3 cups) mozzarella. Bake for 30 minutes, until you see the sauce bubble and the cheese turn golden, then serve it straight from the dish.
Across every version, the one thing that determines success is undercooking the pasta before it goes into the oven. If the noodles are already soft, the bake will turn gluey. Drain them two minutes early and trust the sauce and oven to finish them.
