Step 1: Set the 1.8 kg (4 lb) wings into a 6-quart slow cooker and add 90 g (1/3 cup) gochujang, 60 ml (1/4 cup) soy sauce, 60 ml (1/4 cup) honey, 30 ml (2 tbsp) rice vinegar, 15 ml (1 tbsp) sesame oil, 5 minced garlic cloves, and 1 tbsp grated ginger. Toss the pieces until you see the crimson paste smear over every wing.
Step 2: Cover and slow cook on LOW until the sauce turns deep red and the meat softens under the skin, 3 to 4 hours. Halfway through, lift the lid and turn the wings so your gochujang sauce does not settle at the bottom.
Step 3: Drain off some of the sauce into a small saucepan if it looks thin, and simmer it over medium heat 4 to 5 minutes until it coats your spoon. Brush the thickened sauce over the wings and slide them under the broiler for 4 to 5 minutes, turning once, until the edges char.
Step 4: Scatter 2 tbsp toasted sesame seeds over the hot wings and serve them piled high with sliced scallions and extra sauce for dipping. The heat hits gently at first, then builds, so have rice or lettuce wraps on the table.
