Step 1: Heat your oven to 400F (200C). Warm 15 ml (1 tbsp) of oil in a large oven proof skillet over medium heat, then cook the chicken pieces with 1/2 tsp salt until they turn opaque, about 5 to 6 minutes. They will finish in the oven, so do not worry about a deep brown color.
Step 2: Add 55 g (4 tbsp) of butter to the skillet along with the onion and cook for 4 minutes, until the onion softens and the butter smells nutty. Sprinkle in the flour and stir it for 1 full minute so the sauce does not taste raw.
Step 3: Slowly whisk in the milk and stock, scraping up any bits from the bottom of the pan, then stir in the peas, carrots, and thyme. Let the mixture bubble gently for 5 to 7 minutes, when it should coat the back of your spoon without being too thick.
Step 4: Arrange the biscuits over the surface of the saucy filling, leaving a little space between them so the heat can move. Transfer the skillet to the oven and bake for 18 to 20 minutes, until the biscuits are puffed, golden, and cooked through underneath.
Step 5: Set the skillet on a trivet at the table and spoon the pot pie into shallow bowls, giving everyone one or two biscuits and plenty of the creamy chicken and vegetables below.
