Classic Chicken Noodle Soup
This is the one to make when you want a clear, savory broth with wide noodles and tender pieces of chicken breast in every spoonful.

Ingredients (makes 6 servings)
- Boneless skinless chicken breasts: 680 g (1.5 lb)
- Olive oil: 2 tbsp
- Yellow onion, diced: 1 medium
- Carrots, sliced: 3 medium
- Celery ribs, sliced: 3
- Garlic cloves, minced: 3
- Low sodium chicken stock: 2.4 L (10 cups)
- Wide egg noodles: 170 g (6 oz)
- Fresh dill, chopped: 3 tbsp
- Kosher salt and black pepper: to taste
Instructions
Step 1: Heat the 2 tbsp olive oil in a large pot over medium-high until it shimmers. Season the 680 g (1.5 lb) chicken breasts with salt and pepper, then sear them for about 5 minutes total, turning once, until the outside turns pale but the center is still raw. You might need to work in two batches if your pot is crowded.
Step 2: Pull the chicken out with tongs and drop in the onion, carrots, and celery. Cook for 6 to 8 minutes, stirring a few times, until the vegetables soften and you see a little golden edge on the onion. Add the 3 minced garlic cloves and stir for 30 seconds until your kitchen smells sweet.
Step 3: Pour in the 2.4 L (10 cups) stock, scrape any browned bits off the bottom with your spoon, and return the chicken to the pot. Bring the liquid to a boil, then lower the heat so it barely bubbles, cover, and simmer for 15 minutes until the chicken reaches 165F (74C) in the thickest part.
Step 4: Lift the chicken out again and let it rest on a board for 5 minutes while you shred it with two forks. Stir the 170 g (6 oz) egg noodles into the pot and cook them for 6 minutes, until just tender but still chewy.
Step 5: Return the shredded chicken to the soup, add the 3 tbsp dill, and taste for salt and pepper. Serve hot with extra dill and a wedge of lemon if you like.
Creamy Lemon Orzo Chicken Soup
This one keeps the richness in check, with orzo, a little cream, and a big hit of lemon that makes the broth taste almost lighter than it is.

Ingredients (makes 4 servings)
- Boneless skinless chicken breasts: 450 g (1 lb)
- Olive oil: 1 tbsp
- Yellow onion, diced: 1 small
- Carrots, finely diced: 2 medium
- Garlic cloves, minced: 2
- Orzo: 120 g (3/4 cup)
- Low sodium chicken stock: 1.5 L (6 cups)
- Heavy cream: 120 ml (1/2 cup)
- Lemon zest and juice: from 1 large lemon
- Kosher salt and black pepper: to taste
Instructions
Step 1: Heat the 1 tbsp olive oil in a pot over medium-high. Season the 450 g (1 lb) chicken with salt and pepper, then place it in the pot and sear for 4 minutes per side, until you see a light golden color and the center is still raw.
Step 2: Remove the chicken to a plate. Toss in the onion and carrots and cook for 5 minutes, stirring once or twice, until they soften and you smell sweetness. Add the 2 minced garlic cloves and the 120 g (3/4 cup) orzo, then let the orzo toast for 1 minute while you stir.
Step 3: Pour in the 1.5 L (6 cups) stock, scrape the bottom with your spoon, and add the chicken back. Bring to a boil, then reduce the heat so the liquid barely bubbles and cook for 10 minutes, until the chicken reads 165F (74C) and the orzo is tender with a little bite.
Step 4: Pull the chicken out and set the shreds aside for a moment. Stir the 120 ml (1/2 cup) cream, lemon zest, and 2 tbsp of lemon juice into the pot, then return the chicken and heat for 2 minutes; you do not want it to boil or the sauce will split.
Step 5: Taste and adjust the salt and pepper, then serve in wide bowls with an extra squeeze of lemon and cracked pepper on top.
Spicy Tortilla Chicken Soup
This version gets its smoke and fire from chipotle, and the crushed tortilla chips on top make the first few bites crackle before they soften into the broth.

Ingredients (makes 6 servings)
- Boneless skinless chicken breasts: 680 g (1.5 lb)
- Olive oil: 2 tbsp
- Yellow onion, diced: 1 medium
- Garlic cloves, minced: 4
- Chipotle peppers in adobo sauce, minced: 2 peppers plus 1 tbsp sauce
- Fire-roasted diced tomatoes: 400 g (14 oz can)
- Black beans, drained and rinsed: 400 g (15 oz can)
- Low sodium chicken stock: 1.5 L (6 cups)
- Fresh lime juice: 3 tbsp
- Tortilla chips, crushed: 120 g (4 cups)
Instructions
Step 1: Heat the 2 tbsp olive oil in a large pot over medium-high. Season the 680 g (1.5 lb) chicken on both sides, then lay it in the pot and sear for 4 minutes per side, until you get a deep golden crust and the center is still underdone.
Step 2: Move the chicken to a plate. Add the onion to the pot and cook for 4 minutes, stirring once or twice, until the edges soften and you see a little browning. Stir in the 4 minced garlic cloves and the chipotle peppers, then cook for 30 seconds until the smell turns smoky.
Step 3: Pour in the 400 g (14 oz) tomatoes, the drained black beans, and the 1.5 L (6 cups) stock. Scrape the bottom with your spoon, return the chicken, and bring the pot to a boil. Reduce the heat to a gentle simmer and cook for 12 minutes, until the chicken registers 165F (74C).
Step 4: Lift the chicken out and shred it with two forks, then stir it back into the pot with the 3 tbsp lime juice. Let the soup bubble for 2 more minutes so the flavors settle, and taste to see if you want a little more lime.
Step 5: Ladle the soup into bowls and let everyone crush the 120 g (4 cups) tortilla chips over their own serving, so you keep that crunch right at the table.
Thai Coconut Chicken Soup
Coconut milk, ginger, lemongrass, and lime make this one fragrant and silky, and the sliced chicken breast stays tender because you add it back at the very end.

Ingredients (makes 4 servings)
- Boneless skinless chicken breasts, thinly sliced: 450 g (1 lb)
- Neutral oil: 1 tbsp
- Shallots, sliced: 2 medium
- Garlic cloves, minced: 2
- Fresh ginger, grated: 1 tbsp
- Lemongrass stalks, smashed: 2
- Low sodium chicken stock: 1 L (4 cups)
- Full fat coconut milk: 400 ml (1 can)
- Mushrooms, sliced: 150 g (2 cups)
- Fish sauce and lime juice: 2 tbsp each
Instructions
Step 1: Heat the 1 tbsp neutral oil in a pot over medium-high. Add the sliced shallots and cook for 3 minutes, until they turn translucent and you smell them soften. Stir in the 2 minced garlic cloves, 1 tbsp grated ginger, and the smashed lemongrass, then cook for 30 seconds more.
Step 2: Pour in the 1 L (4 cups) stock and the 400 ml (1 can) coconut milk, and bring the liquid to a very gentle simmer. You want it moving but not boiling hard, or the coconut milk can separate.
Step 3: Add the 150 g (2 cups) sliced mushrooms and simmer for 5 minutes, until they go soft and give the broth a deeper color. Drop in the 450 g (1 lb) sliced chicken and let it cook for 4 minutes, stirring once, until no pink remains.
Step 4: Turn off the heat and stir in the 2 tbsp fish sauce and 2 tbsp lime juice. Fish out the lemongrass stalks with your spoon and discard them, so nobody finds a woody piece later.
Step 5: Ladle the soup into bowls and serve hot. The broth should taste salty, tangy, and almost too fragrant at the same time, which is exactly right.
Ginger Chicken Rice Soup
This one leans on fresh ginger and soft rice for a gentle, soothing pot that still has enough body to count as dinner.

Ingredients (makes 5 servings)
- Boneless skinless chicken breasts: 680 g (1.5 lb)
- Olive oil: 1 tbsp
- Yellow onion, diced: 1 medium
- Carrots, chopped: 2 medium
- Celery ribs, chopped: 2
- Fresh ginger, minced: 2 tbsp
- Garlic cloves, minced: 3
- Jasmine rice, rinsed: 150 g (3/4 cup)
- Low sodium chicken stock: 2 L (8 cups)
- Scallions, sliced: 4
Instructions
Step 1: Heat the 1 tbsp olive oil in a large pot over medium. Add the onion, carrots, and celery, and cook for 6 minutes, stirring a few times, until the vegetables soften and you smell them going sweet. Stir in the 2 tbsp ginger and 3 garlic cloves, then cook 30 seconds more.
Step 2: Pour in the 2 L (8 cups) stock and add the 680 g (1.5 lb) chicken breasts. Bring the liquid to a boil, then reduce the heat so it barely moves and simmer for 12 minutes, until the chicken reaches 165F (74C).
Step 3: Lift the chicken out and set it aside. Stir the 150 g (3/4 cup) rinsed jasmine rice into the pot and cook for 12 minutes, until the grains are tender and the broth has thickened slightly from the starch.
Step 4: Shred the chicken with two forks while the rice cooks. Once the rice is tender, return the chicken to the pot and let it heat through for 2 minutes, so the flavors come back together.
Step 5: Turn off the heat and stir in half the scallions. Serve the soup in deep bowls with the remaining scallions scattered over the top.
Chicken Meatball and Spinach Soup
Mini chicken meatballs, tender orzo, and spinach turn this into a full dinner in one bowl, and the broth stays light enough that you do not feel weighed down.

Ingredients (makes 4 servings)
- Ground chicken breast: 450 g (1 lb)
- Breadcrumbs: 45 g (1/2 cup)
- Grated parmesan: 30 g (1/3 cup)
- Large egg: 1
- Olive oil: 1 tbsp
- Yellow onion, diced: 1 small
- Carrots, chopped: 2 medium
- Low sodium chicken stock: 1.5 L (6 cups)
- Orzo: 80 g (1/2 cup)
- Fresh baby spinach: 60 g (2 cups)
Instructions
Step 1: In a bowl, mix the 450 g (1 lb) ground chicken, 45 g (1/2 cup) breadcrumbs, 30 g (1/3 cup) parmesan, and the egg. Work the mixture gently with your hands just until it comes together, then roll it into small meatballs about the size of a cherry tomato.
Step 2: Heat the 1 tbsp olive oil in a large pot over medium-high. Add the meatballs in a single layer and brown them for 5 minutes, turning once or twice, so you get color but they can stay undone in the center. Set them aside on a plate.
Step 3: Drop the onion and carrots into the same pot. Cook for 4 minutes, stirring once, until they soften and pick up the browned bits. Pour in the 1.5 L (6 cups) stock and bring it to a boil, scraping the bottom with your spoon.
Step 4: Add the 80 g (1/2 cup) orzo and the browned meatballs, then reduce the heat to a steady simmer. Cook for 8 minutes, until the orzo is tender and the meatballs reach 165F (74C) in the middle.
Step 5: Stir in the 60 g (2 cups) spinach and turn off the heat, so it wilts in the hot broth without turning slimy. Serve right away with extra parmesan on top.
Loaded Baked Potato Chicken Soup
All the comfort of a loaded baked potato in soup form, with chunks of chicken breast, tender potatoes, cheddar, and a cool dollop of sour cream on top.

Step 2: Add the onion to the same pot and cook for 4 minutes, until it softens and you see a little golden color. Stir in the 3 minced garlic cloves and cook for 30 seconds, then pour in the 1.5 L (6 cups) stock and the 450 g (1 lb) potatoes.
Step 3: Bring the liquid to a boil, then lower the heat to a steady simmer. Cook for 12 minutes, until the potatoes are soft enough to crush against the side of the pot with a spoon.
Step 4: Stir in the 120 ml (1/2 cup) cream and the cooked chicken, then let everything heat through for 3 minutes. Turn off the heat and whisk in the 100 g (1 cup) cheddar a little at a time, so it melts into the broth without clumping.
Step 5: Ladle into bowls and top each serving with a spoonful of the 100 g (1/2 cup) sour cream and a scatter of scallions, so everyone gets that cool contrast against the hot soup.
Curried Chicken Lentil Soup

Step 2: Add the onion and carrots to the pot and cook for 5 minutes, stirring occasionally, until they soften and you smell the sweet edge of the onion. Stir in the 3 minced garlic cloves and the 2 tbsp curry powder, and let the spices toast for 30 seconds.
Step 3: Pour in the 200 g (1 cup) rinsed red lentils, the 400 g (14 oz) tomatoes, and the 1.5 L (6 cups) stock. Bring the pot to a boil, then reduce the heat so it bubbles gently and cook for 12 minutes, until the lentils start to break apart.
Step 4: Return the chicken to the pot along with the 200 ml (3/4 cup) coconut milk. Simmer for 5 more minutes, until the chicken reaches 165F (74C) and the soup thickens enough to coat your spoon.
Step 5: Taste the broth and adjust the heat with a little more curry powder if you like. Serve in wide bowls with rice or warm flatbread on the side.

Step 2: Move the chicken to a plate. Add the onion to the pot and cook for 4 minutes, stirring once or twice, until it softens and you see the edges turn clear. Stir in the 4 minced garlic cloves, 1 tsp cumin, and 1 tsp oregano, then cook 30 seconds.
Step 3: Add the 200 g (7 oz) green chiles, the drained hominy, and the 1.5 L (6 cups) stock. Scrape the bottom with your spoon, return the chicken, and bring everything to a boil. Reduce the heat to a gentle simmer and cook for 15 minutes.
Step 4: Lift the chicken out and shred it with two forks, then stir it back into the pot along with the 3 tbsp lime juice. Let the soup heat through for 2 minutes, then taste to see if you want more lime.
Step 5: Ladle into bowls while it is hot, and pass extra lime wedges at the table so everyone can brighten their own bowl.
Lemon Avgolemono Chicken Soup
This Greek-style soup gets its velvety texture from tempered eggs and lemon, and the trick is to warm the egg mixture slowly so it thickens the broth instead of scrambling.

Ingredients (makes 4 servings)
- Boneless skinless chicken breasts: 450 g (1 lb)
- Olive oil: 1 tbsp
- Yellow onion, diced: 1 small
- Celery ribs, chopped: 2
- Arborio rice, rinsed: 120 g (1/2 cup)

- Fresh lemon juice: 80 ml (1/3 cup)
- Fresh dill, chopped: 2 tbsp
- Kosher salt and black pepper: to taste
Instructions
Step 1: Heat the 1 tbsp olive oil in a pot over medium. Add the onion and celery and cook for 5 minutes, stirring once or twice, until they soften and you smell a gentle sweetness. Add the 450 g (1 lb) chicken breasts and the 1.5 L (6 cups) stock.
Step 2: Bring the liquid to a gentle boil, then lower the heat so it barely moves. Cook for 12 minutes, until the chicken reads 165F (74C). Lift the chicken out, shred it with two forks, and set it aside.
Step 3: Stir the 120 g (1/2 cup) rinsed arborio rice into the pot and simmer for 15 minutes, until the rice is tender and the broth has thickened slightly. You want the grains soft but still separate.
Step 4: In a medium bowl, whisk the 3 eggs with the 80 ml (1/3 cup) lemon juice until frothy. Ladle a cup of hot broth into the egg mixture one spoonful at a time, whisking constantly, so the eggs warm up without curdling.
Step 5: Turn off the heat, pour the warm egg mixture back into the pot, and stir in the shredded chicken and 2 tbsp dill. The soup will turn smooth and glossy. Serve hot with extra dill and cracked pepper.
Miso Vegetable Chicken Soup
This one is light and savory, with miso stirred in at the very end so it keeps its full flavor, and the vegetables stay bright rather than soft.

Ingredients (makes 4 servings)
- Boneless skinless chicken breasts, thinly sliced: 450 g (1 lb)
- Sesame oil: 1 tbsp
- Yellow onion, thinly sliced: 1 small
- Carrots, julienned: 2 medium
- Shiitake mushrooms, sliced: 150 g (2 cups)
- Baby bok choy, chopped: 2 heads
- Low sodium chicken stock: 1.5 L (6 cups)
- White miso paste: 3 tbsp
- Fresh ginger, grated: 1 tbsp
- Garlic cloves, minced: 2
Instructions
Step 1: Heat the 1 tbsp sesame oil in a pot over medium-high. Add the onion and carrots and cook for 3 minutes, until they just begin to soften and you smell them release their aroma. Stir in the 2 minced garlic cloves and 1 tbsp grated ginger, then cook 30 seconds.
Step 2: Pour in the 1.5 L (6 cups) stock and bring it to a gentle simmer. Add the 150 g (2 cups) shiitake mushrooms and the 450 g (1 lb) sliced chicken, then cook for 5 minutes, until the chicken turns white and the mushrooms go silky.
Step 3: Turn the heat down to low. Scoop a few tablespoons of hot broth into a small bowl, add the 3 tbsp miso paste, and whisk it with a fork until smooth. This keeps the miso from clumping when you add it to the pot.
Step 4: Stir the miso mixture back into the soup along with the chopped baby bok choy. Cook for 2 minutes, just until the greens wilt and turn bright green, then turn off the heat completely.
Step 5: Ladle the soup into bowls while the broth is steaming hot, and serve right away, because the bok choy stays best when you do not let it sit in the pot too long.

- Blue cheese crumbles: 60 g (1/2 cup)

Step 2: Add the onion, celery, and carrots to the pot. Cook for 5 minutes, stirring once or twice, until the vegetables soften and you smell them turning sweet. Stir in the 3 minced garlic cloves and cook for 30 seconds.
Step 3: Pour in the 1.5 L (6 cups) stock and the 120 ml (1/2 cup) hot sauce, then scrape the bottom with your spoon. Return the chicken and bring the liquid to a boil. Reduce the heat and simmer for 15 minutes, until the chicken reaches 165F (74C).
Step 4: Pull the chicken out, shred it with two forks, and set it aside. Whisk the 120 g (4 oz) cream cheese into the pot until it melts and the broth turns smooth, then stir the chicken back in.
Step 5: Turn off the heat and stir in the 60 g (1/2 cup) blue cheese until it just begins to soften. Serve in bowls with extra blue cheese on top if you want the flavor even stronger.
Freezer Chicken Vegetable Soup
This makes a generous batch with a bright, herby broth, and you can freeze most of it now so a future weeknight only needs reheating.

Ingredients (makes 3 freezer bags, 4 servings each)
- Boneless skinless chicken breasts: 900 g (2 lb)
- Olive oil: 2 tbsp
- Yellow onion, diced: 1 large
- Carrots, sliced: 4 medium
- Celery ribs, sliced: 4
- Garlic cloves, minced: 4
- Green beans, trimmed and cut: 200 g (2 cups)
- Corn kernels: 150 g (1 cup)
- Diced tomatoes: 400 g (14 oz can)
- Low sodium chicken stock: 2.4 L (10 cups)
- Dried Italian seasoning: 2 tsp
Instructions
Step 1: Heat the 2 tbsp olive oil in a large pot over medium-high. Add the 900 g (2 lb) chicken and sear for 5 minutes total, turning once, until you see a pale golden crust but the inside is still raw. Set the chicken aside.
Step 2: Add the onion, carrots, and celery to the pot. Cook for 6 minutes, stirring a few times, until the vegetables soften and you see the onion turn translucent. Stir in the 4 minced garlic cloves, 200 g (2 cups) green beans, 150 g (1 cup) corn, and the 2 tsp Italian seasoning.
Step 3: Pour in the 400 g (14 oz) tomatoes and the 2.4 L (10 cups) stock, then scrape the bottom with your spoon. Return the chicken and bring the pot to a boil. Reduce to a gentle simmer and cook for 15 minutes.
Step 4: Lift the chicken out, shred or chop it, and stir it back into the soup. Turn off the heat and let the pot cool until it is just warm, then ladle it into 3 freezer containers and press out as much air as you can before sealing.
Step 5: To reheat, thaw one freezer portion in the refrigerator overnight, then simmer in a pot for 10 minutes, stirring now and then. Serve hot with a sprinkle of fresh parsley or a spoon of grated parmesan on top.
The one technique that matters most with these soups is how you handle the chicken. Pull it as soon as it hits 165F (74C), shred or slice it, and add it back at the end, so every spoonful keeps a tender bite.
Pick whichever version fits tonight, and let the broth do the work.
