Instructions
Step 1: Warm the 2 tbsp olive oil in a large pot over medium heat and add the chopped onion, carrots, and celery. Cook for 8 minutes, stirring once or twice, until the onion turns translucent. You’ll smell the vegetables soften and sweeten as they cook.
