Instructions
Step 1: Put the 1.4 kg chicken thighs in your large stockpot with the 700 g chopped carrots, celery, and onion, the garlic, 2 tsp thyme, 3 bay leaves, 1 1/2 tsp of the salt, and 1 tsp pepper. Pour in the 2 L broth and bring the pot to a boil over medium high heat.
Step 2: Lower the heat and simmer for 25 minutes, until the chicken is cooked through and the vegetables are tender. You can lift the chicken out, shred the meat, and return it to the pot, then discard the bay leaves and remove the soup from the heat.
Step 3: Let the soup cool for 30 minutes, then ladle it into 2 freezer bags, leaving about 2.5 cm (1 in) of headspace. Press out the air, seal the bags, and lay them flat in your freezer.
Step 4: When you want to eat, move a frozen bag to the fridge the night before or set it in a bowl of cool water to thaw. Pour the thawed soup into a pot and bring it to a gentle simmer over medium heat.
