Freezer-Ready Crockpot Chicken Alfredo
This version lets you assemble two full bags of saucy chicken on a free afternoon, then freeze them flat. On cooking day you dump a bag into the crockpot, boil some pasta, and dinner looks after itself.

Ingredients (makes 2 freezer bags, 4 servings each)
- Boneless, skinless chicken breasts: 1.4 kg (3 lb)
- Heavy cream: 480 ml (2 cups)
- Cream cheese: 340 g (12 oz)
- Grated Parmesan cheese: 120 g (1 1/4 cups)
- Chicken stock: 240 ml (1 cup)
- Garlic, minced: 8 cloves
- Italian seasoning: 2 tsp
- Salt: 1 tsp
- Black pepper: 1/2 tsp
- Dry fettuccine, to cook on serving day: 680 g (1.5 lb) total
Instructions
Step 1: You divide the 1.4 kg (3 lb) of chicken breasts evenly between two large zip-top freezer bags. Add half the 8 cloves of garlic, half the 2 tsp of Italian seasoning, and half the 1 tsp of salt and 1/2 tsp of black pepper to each bag, then seal and massage the seasonings into the meat.
Step 2: Spoon 170 g (6 oz) of the cream cheese into each bag and pour in 240 ml (1 cup) of heavy cream and 120 ml (1/2 cup) of chicken stock per bag. Squeeze out as much air as you can, seal, and shake gently to mix the liquid around the chicken. You do not need to blend it perfectly now.
Step 3: Add 60 g (1/2 cup) of Parmesan to each bag, seal, and lay the bags flat in your freezer. They will keep for up to 3 months, and you can stack them to save space.
Step 4: On cooking day, run one frozen bag under warm water for just a minute to loosen the contents, then tumble the block into your crockpot. Cook on low for 6 hours or on high for 3, until you can pull the chicken apart easily.
Step 5: Shred the chicken right in the pot with two forks and stir the sauce. If it looks separated, keep stirring and you will see it come back together as the cream cheese and Parmesan melt fully.
Step 6: Cook 340 g (12 oz) of dry fettuccine until just al dente, then fold it into the sauce. You can spoon the pasta into bowls, top with the extra Parmesan, and serve while the chicken is juicy and the sauce clings to the noodles.
The real key with every version is the point where you shred the chicken and stir in the Parmesan. That bit of patient stirring, three or four minutes of moving the sauce around, is what keeps the cream smooth and lets the cheese melt into the whole pot rather than clumping.
