Method
- Mix flour, water, and starter until shaggy. Cover and rest 30 minutes.
- Sprinkle salt and 1 tbsp water over dough, fold to incorporate. Fold in turkey, cheddar, thyme, and pepper. Cover and rest 15 minutes.
- Perform 3 sets of stretch and folds, 30 minutes apart. Let rise until puffy, about 1 to 2 more hours.
- Shape dough into a boule on a floured surface, bench rest 20 minutes, then final shape into a tight boule. Place seam side up in a floured banneton.
- Preheat Dutch oven at 475°F. Turn dough onto parchment, score, and bake covered 30 minutes. Uncover and bake 15 to 20 minutes until deep amber and internal temp reaches 200°F.
- Cool on a wire rack at least 1 hour before slicing with a serrated knife.
Notes
The hands-on time is about 40 minutes, but the dough does a lot of the work while it rests and rises. If your kitchen is cool, the bulk rise may take longer. The loaf is done when the bottom sounds hollow when tapped, or a thermometer reads roughly 200°F.
