Quick Korean Zucchini Side Dish (Hobak Bokkeum) Recipe

Ingredients
  

  • 2 medium zucchini (about 1 lb), sliced into 1/4-inch rounds
  • 1/2 tsp kosher salt
  • 1 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1/8 tsp gochugaru (optional)
  • 1 tsp toasted sesame oil
  • 1 tsp toasted sesame seeds
  • 1 green onion, thinly sliced

Method
 

  1. Toss the zucchini with the kosher salt and let it sit for 10 minutes. Rinse, then squeeze out as much liquid as possible.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and gochugaru and stir for 30 seconds until fragrant.
  3. Add the squeezed zucchini and soy sauce. Cook for 2 to 3 minutes, stirring often, until crisp-tender with a few charred spots.
  4. Remove from heat and toss with the sesame oil, sesame seeds, and green onion. Serve immediately.

Notes

The 10 minutes of salting and resting is not included in the prep time. If you are making a double batch, cook the zucchini in two batches so it sears instead of steaming.
