Pomodoro Sauce Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 4 cloves garlic, thinly sliced
  • 1 (28-ounce) can whole peeled tomatoes
  • 4 to 5 fresh basil sprigs
  • 1 tsp kosher salt

Method
 

  1. Pour olive oil into a cold saucepan. Add sliced garlic, set over medium heat, and cook until fragrant and lightly golden, about 3 minutes. Pour in the canned tomatoes with their juices.
  2. Bring to a simmer, then reduce heat to low. Use a wooden spoon to crush the tomatoes into chunky pieces. Simmer uncovered for 25 to 30 minutes, stirring occasionally, until thick and glossy.
  3. Remove from heat. Tear in fresh basil leaves and stir. Let sit 1 minute, then season with salt to taste. Serve warm.

Notes

If your canned tomatoes seem particularly sharp, stir in a pinch of sugar (no more than 1/2 teaspoon) after simmering. The sauce thickens as it cools, so add a splash of pasta water if it’s too thick for your liking.
