Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 3/4 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 3 tablespoons unsalted butter, softened (for filling)
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Cream butter, brown sugar, and granulated sugar until light and fluffy.
  2. Beat in peanut butter, egg, and vanilla until smooth and glossy.
  3. On low speed, mix in flour, baking soda, and salt until just combined. Do not overmix.
  4. Drop tablespoonfuls of dough onto lined baking sheets, press with a fork to crosshatch, and bake 9-11 minutes. Cool on the sheet 5 minutes, then transfer to a rack to cool completely.
  5. Whip filling ingredients together until light and spreadable, about 3 minutes.
  6. Pair cookies by size, spread filling on the flat side of one, sandwich gently, and press until filling reaches the edge. Serve.

Notes

The cookies are softest the day they are baked, but the filling helps keep them tender for days. If you prefer a crispier cookie, bake 1-2 minutes longer and let them cool completely before filling.
