Panko Crusted Salmon Recipe

Ingredients
  

  • 4 skinless salmon fillets, 6 oz each
  • 3 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper
  • 1/2 cup panko breadcrumbs
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 400°F (200°C). Mix the mustard, lemon juice, garlic powder, salt, and pepper, then spread over the tops and sides of the salmon on a parchment-lined sheet.
  2. Press the panko onto the mustard-coated salmon. Drizzle the olive oil over the crumbs.
  3. Bake for 10 to 12 minutes, until the salmon flakes easily and the panko is deeply golden.
  4. Serve immediately with lemon wedges and fresh herbs.

Notes

If your fillets have skin, place them skin-side down and coat only the top with mustard and panko. The skin will crisp against the hot pan while the top stays crunchy.
