Ingredients

  • 2 ½ cups (315 g) all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ cups (300 g) granulated sugar
  • 2 tbsp finely grated orange zest
  • ½ cup (115 g) unsalted butter, melted and cooled
  • 2 large eggs, at room temperature
  • 1 cup (240 ml) buttermilk, at room temperature
  • ¼ cup (60 ml) fresh orange juice
  • 2 tsp vanilla extract
  • 1 ½ cups (180 g) powdered sugar
  • 3 to 4 tbsp fresh orange juice (for glaze)
  • 1 tsp orange zest (optional, for glaze)

Method

  1. Preheat oven to 350°F (175°C). Grease and flour a 10-cup bundt pan. Whisk flour, baking powder, baking soda, and salt in a medium bowl.
  2. In a large bowl, rub orange zest into sugar until fragrant. Whisk in melted butter, then eggs one at a time, followed by buttermilk, orange juice, and vanilla.
  3. Fold wet mixture into dry ingredients until just combined. Pour into prepared pan and smooth the top.
  4. Bake 45-50 minutes until a toothpick comes out clean. Cool in pan 15 minutes, then invert onto a rack to cool completely.
  5. Whisk powdered sugar with 3 tbsp orange juice, adding more until pourable. Stir in optional zest. Pour glaze over cooled cake, let set 20 minutes, then slice.

Notes

Cool the cake completely before glazing, or the glaze will melt and soak right in. For extra citrus flavor, brush the warm cake with 2 tbsp fresh orange juice while it cools. The glaze will set with a thin, slightly crisp shell.
