Ingredients
  

  • 3 large ripe bananas (about 1 1/2 cups mashed)
  • 1/3 cup melted unsalted butter or neutral oil
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all‑purpose flour
  • 1 cup old‑fashioned rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat oven to 350°F (180°C). Grease a 9x5‑inch loaf pan. In a large bowl, mash the bananas, then whisk in melted butter or oil, brown sugar, egg, and vanilla until blended.
  2. In a separate bowl, whisk together flour, oats, baking soda, salt, and cinnamon.
  3. Pour wet ingredients into dry and fold with a spatula just until no flour streaks remain. Do not overmix.
  4. Scrape batter into the prepared pan, smooth the top, and sprinkle with a few extra oats if desired. Bake 50 to 60 minutes until a toothpick inserted in the center comes out clean.
  5. Cool in the pan 10 minutes, then turn out onto a wire rack to cool completely before slicing and serving.

Notes

For the cleanest slices, let the bread cool fully — warm bread compresses under the knife. If you’d like to get ahead, the loaf freezes beautifully. Thaw overnight in the fridge and toast individual slices to revive the texture.
