- Preheat oven to 350°F (180°C). Grease a 9x5‑inch loaf pan. In a large bowl, mash the bananas, then whisk in melted butter or oil, brown sugar, egg, and vanilla until blended.
- In a separate bowl, whisk together flour, oats, baking soda, salt, and cinnamon.
- Pour wet ingredients into dry and fold with a spatula just until no flour streaks remain. Do not overmix.
- Scrape batter into the prepared pan, smooth the top, and sprinkle with a few extra oats if desired. Bake 50 to 60 minutes until a toothpick inserted in the center comes out clean.
- Cool in the pan 10 minutes, then turn out onto a wire rack to cool completely before slicing and serving.
Notes
For the cleanest slices, let the bread cool fully — warm bread compresses under the knife. If you’d like to get ahead, the loaf freezes beautifully. Thaw overnight in the fridge and toast individual slices to revive the texture.
