Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • ¼ tsp almond extract (optional)
  • 2 ½ cups all-purpose flour
  • 2 tbsp cornstarch
  • ½ tsp baking powder
  • ½ tsp fine sea salt
  • 2 cups powdered sugar
  • 2 to 3 tbsp milk
  • ½ tsp vanilla extract (for icing)
  • Food coloring, mini chocolate chips, orange sprinkles, or small candies

Method

  1. Cream butter and sugar until fluffy, about 3 minutes. Preheat oven to 350°F (175°C).
  2. Beat in egg, vanilla, and almond extract until combined.
  3. Whisk flour, cornstarch, baking powder, and salt. Slowly mix into butter mixture. Shape dough into a disc, wrap, and chill 30 minutes.
  4. Roll dough to ¼‑inch thickness on a floured surface. Cut circles or snowman shapes. Reroll scraps once.
  5. Bake on parchment‑lined sheets 8‑14 minutes (depending on size) until edges are barely golden. Cool 5 minutes on sheet, then transfer to a rack.
  6. Whisk powdered sugar with 2 tbsp milk and ½ tsp vanilla for icing; add color if desired. Pipe on snowmen features and press candies while wet. Let set 30 minutes.

Notes

The dough needs a full 30‑minute chill to prevent spreading. Bake similar‑sized cookies together, and make sure they are completely cool before icing. Stack the finished cookies with wax paper to keep the icing intact.
