- Preheat oven to 425°F. Whisk sugar, cinnamon, salt, ginger, and cloves in a large bowl.
- Whisk in eggs, then stir in pumpkin and evaporated milk until smooth.
- Pour filling into the unbaked pie crust set on a foil-lined baking sheet.
- Bake at 425°F for 15 minutes, then reduce heat to 350°F and bake 40 to 50 minutes more, until edges are set and center jiggles slightly.
- Cool completely on a wire rack for at least 2 hours, then slice and serve.
Notes
The cooling time is essential; the filling continues to set as it cools. For the best results, bake the pie the day before serving and refrigerate overnight. If you're using a standard (not deep-dish) pie crust, the filling may overflow slightly; a foil collar around the edge helps.
