Korean Bulgogi Recipe

Ingredients
  

  • 1 ½ lb thinly sliced beef sirloin or ribeye
  • ½ ripe Asian pear (or 1 small Bosc pear), peeled, cored, and roughly chopped
  • ⅓ cup soy sauce
  • 3 tbsp light brown sugar
  • 2 tbsp toasted sesame oil
  • 4 cloves garlic, smashed
  • 1 tbsp minced fresh ginger
  • 1 tbsp toasted sesame seeds
  • 3 green onions
  • 1 tbsp vegetable or canola oil

Method
 

  1. Blend the pear, soy sauce, brown sugar, sesame oil, garlic, ginger, and 2 sliced green onions until smooth.
  2. Pour the marinade over the sliced beef, massage to coat, cover, and refrigerate at least 30 minutes or overnight.
  3. Heat the vegetable oil in a large cast-iron skillet over high heat. Lift beef from marinade and sear in a single layer in batches, about 2 minutes per side until charred and cooked through.
  4. Pile the bulgogi over rice, top with the remaining sliced green onion and extra sesame seeds, and serve hot.

Notes

The hands-on prep time does not include marinating, so plan at least 30 minutes of rest in the fridge. For the most tender result, slice the beef against the grain as thinly as you can.
