Korean Beef Rice Bowls Recipe

Ingredients
  

  • 1 lb ground beef, 80/20
  • 1 cup jasmine or short-grain white rice
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp gochujang
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • Half an English cucumber
  • 1 tbsp rice vinegar
  • 1 carrot
  • 2 scallions
  • Toasted sesame seeds
  • Vegetable oil

Method
 

  1. Cook the rice according to package directions. While it cooks, whisk the soy sauce, brown sugar, gochujang, and sesame oil in a small bowl. Thinly slice the cucumber and toss it with the rice vinegar and a pinch of sugar. Set it aside.
  2. Heat a drizzle of vegetable oil in a large skillet over medium-high heat. Crumble in the ground beef and cook, breaking it up, until browned and no pink remains, about 5 minutes. Drain excess fat if needed. Stir in the garlic and ginger and cook 1 minute more.
  3. Pour the sauce over the beef. Bring it to a simmer, then cook for 2 to 3 minutes, stirring, until the sauce thickens and coats the meat.
  4. Divide the rice among bowls. Top with the beef, pickled cucumber, carrot ribbons (use a peeler), scallions, and sesame seeds. Serve right away.

Notes

The beef is best straight from the pan while it’s still glossy and warm. If you end up with extra, store the components separately so the rice doesn’t soak up the sauce overnight.
