Ingredients
  

  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 1 small shallot, finely chopped
  • 2 cloves garlic, thinly sliced
  • ½ cup dry white wine
  • ½ cup low-sodium chicken broth
  • 1 tbsp unsalted butter
  • 1 tbsp fresh lemon juice
  • 2 tsp chopped fresh thyme leaves
  • 1 tbsp chopped fresh parsley

Method
 

  1. Pat chicken dry and season with salt and pepper. Sear in hot olive oil until deeply golden on both sides, about 4 and 3 minutes. Transfer to a plate.
  2. In the same pan, cook shallot until soft, add garlic for 30 seconds. Pour in wine, scrape up browned bits, and add broth and thyme.
  3. Return chicken and any juices to the pan. Bring to a gentle simmer, cover, and cook 12 to 15 minutes until the chicken reaches 165°F.
  4. Remove chicken and tent with foil. Reduce the sauce uncovered over medium-high for 3 to 4 minutes, then off heat stir in butter and lemon juice.
  5. Slice chicken against the grain, plate, spoon sauce over the top, and finish with parsley.

Notes

If the sauce thickens more than you like after adding the butter, stir in a tablespoon of warm water to loosen it. The chicken will continue to cook slightly as it rests; pulling it around 160°F is safe and keeps it especially juicy.
