Method
- Preheat oven to 400°F (200°C). Whisk honey, soy sauce, ketchup, garlic, vinegar, and black pepper in a bowl. If using low-sodium soy sauce, add salt.
- Pat chicken dry. Place skin side up in a 9x13 baking dish or sheet pan, pour glaze over, and flip to coat all pieces, finishing skin side up.
- Bake for 35 minutes, basting with pan juices at the 18-minute mark, until skin is mahogany and internal temp reaches 175°F (79°C).
- Switch oven to broil on high. Broil 2 to 3 minutes until skin bubbles and chars in spots. Spoon pan sauce over thighs and serve with scallions and sesame seeds.
Notes
The pan juices will be thin when the chicken comes out of the oven but will thicken slightly as they cool. If you prefer a thicker sauce, pour the juices into a small saucepan and simmer for 2 to 3 minutes while the chicken rests, then spoon it over the plated thighs.
