Total Time 5 minutes

Ingredients

  • 1 cup raw almonds
  • 4 cups filtered water, plus more for soaking
  • 1 pinch sea salt
  • 1 teaspoon maple syrup or 2 soft dates
  • ½ teaspoon vanilla extract

Method

  1. Soak almonds in water to cover by 2 inches for at least 8 hours; drain and rinse.
  2. Blend soaked almonds with 4 cups fresh water and any optional add-ins on high for 1–2 minutes until smooth.
  3. Strain through a nut milk bag or cheesecloth, squeezing until pulp is dry.
  4. Pour into a jar, seal, and refrigerate; shake well before serving.

Notes

Soaking overnight is not included in prep time. The salt, sweetener, and vanilla are optional; use only the almonds and water for a pure 2-ingredient milk. Separation is normal, just shake before use.
