High Protein Pumpkin Muffins Recipe

Ingredients
  

  • 1 cup pumpkin puree
  • 1 cup full-fat cottage cheese
  • 3 scoops vanilla protein powder (about 90 g)
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/2 cup oat flour
  • 2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp fine sea salt

Method
 

  1. Heat oven to 350°F (175°C) and line 6 muffin cups. Blend cottage cheese, pumpkin, eggs, and maple syrup until completely smooth.
  2. Pour into a bowl and fold in protein powder, oat flour, pumpkin pie spice, baking powder, baking soda, and salt until just combined.
  3. Divide batter among the muffin cups and bake for 20 to 22 minutes, until a toothpick comes out clean.
  4. Cool in the pan 5 minutes, then move to a rack. Serve warm or at room temperature.

Notes

Rest the muffins for a full 10 minutes after they come out of the oven so the crumb sets properly. For a bakery-style top, sprinkle a pinch of coarse sugar and a few oats on the batter right before baking.
