High-Protein Pizza Dough Recipe

Ingredients
  

  • 1 cup (120g) bread flour
  • 1/2 cup (60g) vital wheat gluten
  • 1 tsp active dry yeast
  • 1 tsp granulated sugar
  • 3/4 tsp fine sea salt
  • 2/3 cup (160ml) warm water (110°F/45°C)
  • 1 tbsp extra-virgin olive oil, plus more for bowl

Method
 

  1. In a small bowl, combine the warm water, yeast, and sugar. Let stand until foamy, about 5 minutes.
  2. In a large bowl, whisk the bread flour, vital wheat gluten, and salt until evenly mixed.
  3. Pour the yeast mixture and olive oil into the dry ingredients. Stir into a shaggy dough, turn out, and knead for 8-10 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover, and let rise in a warm spot until doubled, about 1 hour.
  5. Preheat the oven to 475°F (245°C) with a baking sheet or pizza stone inside. Punch dough down, divide into 4 pieces, and shape each on parchment. Top, slide onto the hot surface, and bake 10-12 minutes until crust is golden and cheese is bubbly.

Notes

Rising time is not included in prep or cook time. For a deeper flavor, refrigerate the dough overnight and bring to room temperature before shaping. The dough can also be made ahead and kept in the fridge up to 3 days.
