Method
- Whisk flour, baking powder, and salt together in a bowl. Cream butter and sugar, then beat in egg and vanilla. Mix in dry ingredients until dough comes together.
- Divide dough, shape into discs, and chill at least 30 minutes. Roll to 1/4 inch thick and cut with a Hello Kitty cutter. Place on parchment-lined sheets.
- Bake at 350°F for 10 to 12 minutes until edges are barely golden. Cool on the sheet 2 minutes, then transfer to a wire rack to cool completely.
- Beat meringue powder, powdered sugar, and 5 tbsp water for thick piping icing. Thin a portion with water to flood consistency. Tint with gel colors.
- Pipe white outlines, flood the face, let set. Add yellow nose, black eyes, and pink bow with thicker icing. Let dry 1 to 2 hours before serving.
Notes
Chilling time of 30 minutes is not included in the prep count, so plan for at least an extra half hour before rolling. The royal icing setting time of 1 to 2 hours is also separate. If the cookies spread a bit, pop the cut-out shapes on the tray in the fridge for 10 minutes before baking.
