Greek Salad Dressing Recipe

Ingredients
  

  • 1/2 cup extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2 tbsp red wine vinegar
  • 1 to 2 cloves garlic, finely minced
  • 1 tsp dried oregano
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper
  • Pinch of sugar (optional)

Method
 

  1. Combine the olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, salt, pepper, and sugar (if using) in a small bowl or a jar with a tight lid. Whisk or shake hard for about 30 seconds until emulsified.
  2. Taste on a cucumber slice or a piece of bread. Add more salt or oregano if needed. If the dressing is too sharp, drizzle in a little more olive oil or a pinch of sugar.
  3. Pour over a prepared Greek salad and serve right away, or refrigerate in a sealed jar.

Notes

Shake the dressing again before using after storing; the oil and acid separate as they sit. For the most relaxed garlic flavor, let the dressing rest in the fridge for 30 minutes before the first pour.
