Golden Cast Iron Skillet Cornbread Recipe

Ingredients
  

  • 1 ½ cups yellow cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups buttermilk
  • 2 large eggs
  • ¼ cup unsalted butter (for the skillet)
  • ¼ cup unsalted butter, melted (for the batter)

Method
 

  1. Preheat oven to 400°F (200°C) with a 10-inch cast iron skillet inside. Add ¼ cup butter to the skillet and let it melt. Remove, tilt to coat, then pour any extra into a small bowl.
  2. Whisk together cornmeal, flour, sugar, baking powder, and salt in a large bowl.
  3. In another bowl, whisk buttermilk, eggs, and the ¼ cup melted butter until smooth.
  4. Pour wet mixture into dry, stir until just combined, then scrape batter into the hot skillet.
  5. Bake 20 to 22 minutes until golden and a toothpick comes out with moist crumbs. Cool 5 minutes in the pan, then slice and serve warm.

Notes

For the deepest crust, the skillet needs to be searing hot when the batter hits it. If your oven runs cool, add 2 to 3 minutes to the bake time and watch the color.
