Ingredients

  • 2 servings fresh ramen noodles (or 2 packs instant ramen, seasoning discarded)
  • 2 tbsp gochujang paste
  • 1 tbsp soy sauce
  • 1 tsp toasted sesame oil, plus more for serving
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 4 cups vegetable or chicken broth
  • 1 tsp sugar or honey
  • 2 large eggs
  • Sliced scallions and toasted sesame seeds, for serving

Method

  1. Warm 1 tsp sesame oil in a large saucepan over medium heat. Sauté garlic and ginger until fragrant, about 30 seconds, then stir in gochujang and cook 1 minute more.
  2. While the aromatics cook, bring a pot of water to a boil. Boil eggs for 7 minutes, then ice-bathe. Cook ramen in the same water until tender, about 2-3 minutes, then drain and divide between bowls.
  3. Pour broth, soy sauce, and sugar into the gochujang mixture. Simmer 5 minutes. Ladle hot broth over noodles, top with halved eggs, scallions, sesame seeds, and a drizzle of sesame oil.

Notes

If you are using instant ramen, be sure to discard the seasoning packet. The broth is meant to be sipped, so taste it before serving and adjust the salt and spice as you like.
