Ingredients

  • 1 lb gluten-free bread, cubed
  • 1/2 cup unsalted butter
  • 1 large onion, diced
  • 3 celery stalks, diced
  • 2 cloves garlic, minced
  • 2 teaspoons chopped fresh sage
  • 1 teaspoon chopped fresh thyme
  • 1/4 cup chopped fresh parsley
  • 2 cups chicken or vegetable broth
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method

  1. Preheat oven to 350°F (175°C). Melt butter in a skillet over medium heat, then cook onion and celery with a pinch of salt for 8 minutes. Add garlic, sage, and thyme; cook 1 minute.
  2. Toss bread cubes and parsley with the buttery vegetable mixture in a large bowl until coated.
  3. Whisk broth, egg, salt, and pepper together, pour over bread, and fold gently. Let sit 5 minutes.
  4. Spread into a greased 9x13-inch baking dish and bake 30 to 40 minutes until golden.
  5. Spoon onto plates, making sure to include the crispy top, and serve hot.

Notes

If your gluten-free bread is very soft, dry the cubes in a 300°F oven for 10 to 15 minutes before you start. For a heartier version, brown 8 ounces of bulk sausage with the onion step. Leftovers keep well and reheat beautifully in the oven with a splash of broth.
