Method
- Blend eggs, milk, flour, salt, and vanilla for 30 seconds until smooth. Let rest.
- Place a 10-inch cast iron skillet in a cold oven and heat to 425°F (220°C). Carefully remove the hot skillet, add butter, and swirl until melted and foamy.
- Pour batter into the center, return the skillet to the oven, and bake 18–20 minutes without opening the door until puffed and golden.
- Remove from oven, dust with powdered sugar, and serve immediately with lemon wedges.
Notes
Preheating the oven and skillet takes about 15 minutes, which is not reflected in the prep time. For the tallest rise, let the batter rest at room temperature while the oven heats and avoid opening the door during the early bake.
