Ingredients
  

  • 1 lb large shrimp, peeled and tails off
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp cornstarch
  • ΒΌ tsp red pepper flakes
  • 2 tbsp water
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tbsp neutral oil
  • 1 head butter lettuce, leaves separated
  • Shredded carrot, sliced green onion, roasted peanuts, cilantro for topping

Method
 

  1. Whisk the soy sauce, honey, rice vinegar, sesame oil, cornstarch, red pepper flakes, and water in a small bowl until smooth.
  2. Pat shrimp dry, season lightly with salt. Heat oil in a skillet over medium-high. Sear shrimp in a single layer 2 minutes per side, add garlic and ginger, cook 1 minute. Pour in sauce and toss 1 to 2 minutes until thick and glossy.
  3. Fill lettuce leaves with shrimp, then top with carrot, green onion, peanuts, and cilantro. Serve immediately.

Notes

This dish moves fast, so have all your ingredients measured and toppings ready before you start cooking. If reheating leftover shrimp, add a splash of water to keep the sauce loose.
