Ingredients

  • 1 loaf day-old French bread
  • 4 large eggs
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • 2 tbsp unsalted butter, plus more as needed
  • Powdered sugar, maple syrup, or fresh fruit for serving

Method

  1. Slice the French bread on a diagonal into 1-inch thick pieces.
  2. In a shallow bowl, whisk together the eggs, milk, vanilla, cinnamon, and salt until smooth.
  3. Soak each slice in the custard for about 30 seconds per side, then let excess drip off.
  4. Melt 1 tbsp of butter in a nonstick skillet over medium heat. Fry the slices in batches, about 3 to 4 minutes per side, until deep golden and crisp.
  5. Transfer to warm plates, dust with powdered sugar, and serve right away with maple syrup or fresh fruit.

Notes

If your French bread is very fresh, leave the slices out on a rack for 30 minutes or give them 5 minutes in a 300°F oven before soaking. The toast stays crisp if you keep it in a 200°F oven on a rack while you fry the remaining batches.
