Ingredients

  • 3 cups oat milk
  • 3/4 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon fine sea salt
  • 4 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 tablespoons vegan butter or refined coconut oil (optional)
  • 4 to 5 ripe bananas, sliced
  • 1 box (11 oz) vanilla wafer cookies
  • dairy free whipped topping or cookie crumbs for garnish

Method

  1. Whisk sugar, cornstarch, and salt in a saucepan until smooth. Pour in oat milk and egg yolks, whisking until fully combined.
  2. Cook over medium heat, whisking constantly, until the mixture thickens and begins to bubble, about 6 to 8 minutes. Cook 1 minute more, then remove from heat.
  3. Stir in vanilla and vegan butter until smooth. Let cool 10 minutes, stirring occasionally.
  4. Spread a thin layer of pudding in a 9x13 dish. Layer with vanilla wafers, banana slices, and half the remaining pudding. Repeat another layer, ending with pudding on top.
  5. Cover with plastic wrap pressed to the surface and chill at least 4 hours. Unwrap, top with whipped topping or wafer crumbs, and serve cold.

Notes

The total time does not include chilling, so plan for at least 4 hours in the fridge before serving. If the pudding feels too thick while warm, a few extra tablespoons of oat milk stirred in will loosen it without breaking the custard.
